    I recently watched "Food Inc." a movie with a tagline which promises "You'll never look at dinner the same way again" and let me just say it does not disappoint. If you have seen other sensationalist style movies about food before, don't be put off, "Food Inc." is very different, not only does it reveal the shocking way in which food is produced and its links with causing life threatening illnesses, it also provides viewers with a look at the alternative lifestyle. A visit to a free range organic farm shows the stark contrast between the production values of food. One of the best points made in the movie is that we, the consumer can change the way food is produced by demanding honest healthy food when we shop. The big companies will respond to consumers needs.

    Here are some of the closing lines from the movie which really drive home the changes that you can easily make:
    - You can vote to change this system, three times a day.
    - Buy from companies that treat workers, animals, and the environment with respect.
    - When you go to the supermarket, choose foods that are in season. Buy foods that are organic. Know what's in your food. Read labels.
    - Know what you buy. The average meal travels 1500 miles from the farm to the supermarket.
    - Buy foods that are grown locally.
    - Shop at farmers' markets.
    - Plant a garden. (Even a small one)
    - Cook a meal with your family and eat together.
    - Everyone has a right to healthy food.
    - Ask your school board to provide healthy school lunches.
    - If you say grace, ask for food that will keep us, and the planet healthy.
    - You can change the world with every bite.

    There's a huge list of delicious ingredients coming into season this month, so now really is the time to check what your local supermarket, butcher, fishmonger or farmers market has to offer. As the season changes, bringing with it a nip in the air and beautiful crisp golden leaves, kitchen habits inevitably begin to sway a little more towards those more comforting and warming dishes.

    Personally, as much as I love nice quick meals, if I have the time, delicious slow cooked meats, warm healthy soups and bubbling autumn fruit desserts always beat them hands down on a cold evening. Of course it's very important to keep active during the colder months, but nothing can be better than spending an afternoon cooking up a storm in a warm cosy kitchen, safe in the knowledge that you have a feast bubbling away in the oven. October has lots of fantastic produce coming into and already in season, including mussels, pumpkins, nuts, celeriac and blackberries.

    This week's recipes are part of my Big Harvest Feast; creamy mussels steamed in cider, delicious slow cooked lamb shanks with colcannon mash, and a cosy little dessert of rustic apple and blackberry galettes. I think they make the most of what's in season right now and after devouring it all after taking these photographs, I can promise you it tastes darn good!

    Mussels in Irish Cider
    Mussels have a reputation for being difficult to cook, but this is just not true. The hardest part in reality is the washing. Place them in cold water (they should close, if they don't you should throw them away). Scrub any dirt off the surface of the mussels and remove the beard with a small knife. If you can get this down you will have no trouble and they take minutes to cook, so they're the perfect little starter. I love serving the pot straight to the table from the stove and clunking large spoonfuls of the cooked steaming mussels onto guest's plates. Make sure to serve with some chunky bread to mop up the juices!

    Serves 4
    1.5kg mussels, washed and the beards removed
    1 medium onion, finely chopped 

    3 cloves of garlic, peeled and crushed

    200g of pancetta pieces. 

    A good knob of butter

    400ml good Irish cider
    4 tablespoons of cream
    A good handful of freshly chopped parsley,
    Salt and freshly ground black pepper

    Discard any mussels that are open before cooking and any that stay closed after cooking.
    Place a large pot over a high heat and brown the pancetta pieces until just golden and sizzling. Add in a knob of butter, allow it to melt and then add the onion and garlic. Cook gently for three minutes until the onion is soft.
    Add in the cider and allow to bubble away for a few minutes so all the flavours mingle in together. Tumble in the mussels, cover with a lid and allow them to steam for about four minutes until they open, making sure to give the pot a good shake once or twice during the cooking time.
    Remove from the heat and stir in the cream and parsley and season with sea salt and ground black pepper.
    Serve with some crusty bread to mop up the liquid!

    I have some big news! We are upping sticks and moving to a new kitchen next week, so we have our serious planning hats on at the moment. It's always so exciting when you get a new kitchen and of course a place to stay, although for me one is most definitely secondary to the other. There are a few things I look forward to most when it comes to moving into a kitchen, first and foremost a good storecupboard, jam packed with all those handy essentials which make a meal, and the second, kitchen gadgets! I've been getting lots and lots of advice on twitter and facebook about your "new kitchen essentials" with the one over ruling suggestion being a Kitchen Aid mixer, which I do not already have. We've decided that the best thing to do is get settled, see what we need, beyond what we already have, and plan a shopping list! I'll keep you posted on the big move but for now here's a recipe for today!

    Zingy Quick and Tasty Stir-Fry
    Stir-fries are a brilliant way of getting lots of veggies into your diet without compromising on taste.
    This one is full of zingy flavours and healthy, tasty veg. Don’t be put off by Chinese cabbage — it’s a great standby vegetable which will last quite a while in the fridge and works well in stirfries such as this one or eaten raw in a crunchy Asian salad.

    Serves four
    250g noodles of your choice
    2 tbsps soy sauce
    1 tsp honey
    Juice of 1 lime
    1 red pepper, thinly sliced
    2 carrots, grated or sliced in thin matchsticks
    ½ head Chinese cabbage, roughly shredded
    1 red onion, sliced into thin half moons
    2 cloves garlic, finely minced
    1 red chilli, finely chopped

    Cook the noodles according to the instructions on the packet, drain and set aside.
    Whisk together the soy sauce, honey and lime juice in the bottom of a large bowl. Add in the chopped veggies, except for the onion, garlic and chillies, and toss until everything is combined.
    Heat the oil in a wok or large frying pan until it’s very hot, add the onion, chilli and garlic and stir-fry for about 40 seconds.
    Add in the veggies and stir fry until they are tender. You can check this by taking a bite.
    Then add the noodles and toss in with all the veggies until combined, then fry for a further minute.
    Serve straight away or allow to cool then pop in a lunchbox for the next day.

    I always had a sweet tooth growing up and it hasn't helped that I now am a bit of a demon in the kitchen when it comes to baking sweet things. My theory is that if you're going to go to the bother of baking, you might as well make a big batch of whatever you're cooking up. Now whether you share your baking creations or scoff them in a corner rocking by yourself, well that's entirely up to you! I try and balance all my baking and sweet stuff out with lots of healthy food too, so in mind it all balances out just perfectly. While I do very much enjoy spending time beating sugar into butter, whisking eggs into stiff foamy peaks, and icing cupcakes, sometimes, yes sometimes folks, it all comes down to little more than rice crispy buns. To be honest, I'm not ashamed to say it, there is an incredible sense of satisfaction to melting chocolate and then pouring it over crisped grains of rice, placing in paper cases, popping them in the fridge, licking the spoon (and the bowl if you maneuver yourself correctly!), and gorging on the buns when they are set! I decided recently to go one better and take the simplicity of rice crispy buns and combining them with the American sweetness of rocky road cookies, and "hey presto!", my very delicious Crunchie Rocky Road Buns!

    Okay, so you've gotten past Rice Krispie buns; well, these Rocky Road Buns are the next step up in deliciousness. Packed with lots of goodies, these little babies will give you that quick hit of sugar you crave. They're easily thrown together in a matter of minutes with ingredients that can be found in the store cupboard. I picked up a very cute pack of 'mini mini marshmallows' to decorate the top of mine.

    Makes 12 big buns
    150g digestive biscuits, roughly bashed so you have nice chunks
    200g mini marshmallows, or large ones chopped up
    4 Crunchie bars, chopped into chunks
    250g chocolate (milk or dark)
    3 tbsps butter

    In a large bowl combine the digestive biscuits, marshmallows and Crunchie bar chunks and set aside.
    Place the chocolate and butter in a heatproof bowl and sit over a pan of simmering water and stir until melted. You can also do this in the microwave -- just keep your eye on it and don't forget to stir halfway through.
    You ideally want the chocolate to be glossy and smooth.
    Pour the chocolate and butter over the biscuits, marshmallows and Crunchie chunks and, using a wooden spoon, stir until everything is nicely coated.
    Place heaped spoonfuls into paper cases and place in the fridge to firm up for about 30 minutes.
    You can also turn the mixture out on to a baking tray and spread it evenly, then slice them up into squares when they are set, but the paper cases are far less trouble, with no washing up!

    September is always one of those months like January where the slate is wiped clean and it's time to start all over again. The kids are back at school and students back to college, and professional nomads like myself are back to reality! Between all our moving around over the summer months, things were a little chaotic especially when it came to food. Normal routine went out the window, replaced by irregular eating times and extra helpings of desserts - a good dollop of cream with everything. You could definitely say I indulged over the last few months and unfortunately, I'm not exactly feeling the better of it!

    Since we arrived back in Ireland however, things are back on track, the kitchen is stocked with fruit and veggies and all my essential storecupboard ingredients have been replenished. As amazing as it is to travel, there really is nothing like being back home in your own kitchen.

    With the winter months fast approaching, the inclination to stay inside and out of the cold becomes all the more tempting, so instead of dodging the weather and waiting until the New Year, I'm heading outdoors and getting active! All this new healthy living will take it's toll, mind you, so luckily I have a few healthy, filling recipes up my sleeve to stave off starvation and make sure I'm getting all the good stuff. This recipe comes from my book Good Mood Food: Simple, Healthy, Homecooking, it's the perfect little pick me up for those cold winter days - packed with nutrients from start to finish and full of flavour!

    Boot Camp Soup
    This a surprisingly tasty soup, which is wonderfully cleansing. Used originally as part of a weight-loss diet, I make it regularly as a really substantial lunch. This recipe makes a generous amount – I freeze half the soup and keep the rest in the fridge.

    Serves 8
    3 onions, chopped into chunks
    2 green peppers, chopped into chunks
    1 bunch of celery, chopped into chunks
    1 iceberg lettuce, chopped into chunks
    2 x 400g tins chopped tomatoes
    800ml/1½ pints vegetable stock
    300g/10½oz lentils or soup mix
    Sea salt and freshly ground pepper

    Add all the ingredients to a large pot and bring to the boil. Reduce the heat
    and simmer for 20–30 minutes until the lentils are soft.
    Blend the soup to a smooth consistency with a hand blender; you may
    need to add a little extra stock if the soup is too thick. Season with salt and
    pepper, and serve.

    I've been packing a fair bit of travel in this summer and I'm fairly sure with the amount of airmiles that have wracked up, I'm doing the environment no favours! This week is no different I'm back in Sweden for a bit of work and to fully soak up all the best a Swedish summer has to offer! One of my favourite things about Sweden in the summer is the beautiful still lakes with their picturesque jetties. This week I finally got my first swim of the summer in and despite always being slightly worried about what lurks at the bottom of those murky waters, I can report that the water was beautiful. All that swimming in lakes can make a cook like myself hungry, so we decided to sample what the Swedes do best, the Smorgasbord!

    One of my favourite places to eat in Gothenburg is the Gunnebo Coffee House and Restaurant which is situated on the grounds of one of Sweden's most beautiful neoclassical estates, just south of the city. The buffet style lunch is made with all organic ingredients and always has something interesting and healthy to offer. During the summer months the kitchen uses fruit and vegetables from the huge gardens outside, which I find very exciting to walk through! The day we were there amongst the fantastic choice of dishes there was a cabbage salad, cucumber and fennel lentil salad, herbed pork fillet, boiled cumin potatoes, roast salmon with a creamy sauce, and Roast tomatoes with Goats cheese and red onion. We assembled our plates with fairly hefty portions, a handful of the chunky homemade bread and headed outdoors to pick our way through it. There is something fairly special about eating fresh and healthy food outdoors on a warm summer day that just makes everything taste all the better! For now, as the Swedes say "hej då"!

    Roast Tomatoes with Goats cheese and Red Onion
    This is a super way to make the most of the last of the summer tomatoes! This method brings out the fantastic natural sweetness and is perfection in every bite. You can prepare these ahead of time and serve them at room temperature.

    Serves 4
    4 tomatoes, cut in half
    1 goats cheese log, cut in slices
    1 red onion, sliced in half moons
    A good glug of olive oil
    A generous pinch of sea salt and ground black pepper

    Preheat the oven to 200oC/Gas Mark 6.
    Arrange the tomato halves on a baking tray and top each on with a few slices of red onion and then place a slice of cheese on top.
    Drizzle each tomato with a little olive oil and season with sea salt and ground black pepper.
    Place in the oven to cook for 35 minutes or until the the tomatoes are soft and tender. Serve warm or cold.

    Cucumber and Fennel, Lentil Salad
    I think lentils are by far one of the most underused pulses. They are like the black sheep of the legume family, with many people having never even cooked them before. However that all has to change, they are full of health benefits, and just as quick as pasta to cook so no excuses! They go great with lots of different dishes but they go great here as a tasty little salad!

    Serves 4
    1 cucumber, cut in chunky diagonal slices
    150g of green lentils
    A good handful of fennel fronds, roughly chopped
    Juice of 1/2 a lemon
    2 tablespoons of olive oil
    A generous pinch of sea salt and ground black pepper

    Rinse the lentils in cold water drain and place in a pot. Cover them with plenty of water and bring to the boil, cooking for 15 minutes or until tender. Drain and set aside to cool.
    In a large bowl whisk together the lemon juice and olive oil. Add in the fennel fronds, cucumber slices, and cooled lentils.
    Season with sea salt and ground black pepper and serve!

    Simple Garlic Mushroom Bruschetta
    I love quick and tasty snacks like this which are easy to throw together and are packed full of flavour. Garlic is one of my favourite ingredients, and the fact that it has so many healthy properties, is one of the biggest reasons I justify the amount I use when I cook! Getting some decent quality bread makes all the difference for a bruschetta, you want something that has a nice crisp crust and a soft but chewy inside!

    Serves 2
    200g of mushrooms, thinly sliced
    2 garlic cloves, roughly chopped
    1 tablespoon of olive oil
    2 small ciabatta loaves, sliced in half
    A generous pinch of sea salt and ground black pepper

    Heat a frying pan over a high heat and add a little olive oil.
    Add the garlic and fry for 30 seconds, then throw in the sliced mushrooms.
    Fry the mushrooms until they are soft.
    While the mushrooms are cooking, drizzle the ciabatta with a little extra olive oil and toast under a hot grill or on a griddle pan, until golden.
    Place a generous amount of garlic mushrooms on each toast and season with sea salt and ground black pepper.
    Devour!

    As I mentioned I am on Market Kitchen all this week cooking down at the world famous Borough Market in London, a real haven for food lovers! I really loved the day recording down in the market as it was a lot more hands on, and we got to actually shop around for some of the ingredients, plus there was a bit of time for me to nose around the great selection of veg and food products on offer. We recorded all five shows in the one day, so let me just say it is a LONG day! I arrived at about 8am and didn't leave till around 9pm that night, but despite the long hours and the freezing cold, the amazing team really made recording an absolute pleasure.

    There was a crack team of five food super heroes producing the content for the show down in the market and these guys really work hard! I have a feeling they have posed together for a photo before because when I told them I wanted a picture, they very naturally assembled themselves in that formation! Let me introduce you to them, Leonie in the middle is the home economist and she spend loads of time compiling info on each of my recipes, the woman is like a human food encyclopedia and was on hand with great one liners to stick in to my piece! Rasheed there with the clipboard is the producer and made sure everything ran smoothly and kept my spirits high throughout the day, he is a former chef and he too has a fantastic and extensive knowledge of food!

    Robin with the glasses and hoody, is the hard core camera dude, who is clearly an expert at his job, as he showed no signs of loosing his patience with me even after my 15th take on one shot! He was full of advice and really helped me keep things moving along throughout the day. Olga is the foodie equivalent of a rockstar music video director and kept me so motivated all day long! She is a bundle of energy and was lots of fun to work with. Last but not least in blue hoodie is Dan, and he is literally a professional feeder! I think I saw a documentary about people who kept their partners overweight by feeding them a constant supply of junk food, and I am fairly sure Dan could be guilty of this. (note: I just googled feederism and apparently feeders derive a sexual pleasure in feeding their partners, sorry Dan maybe your not one!) He is solely responsible for introducing me to curly wurly cake! (I know, I know, recipe coming soon!)

    In terms of recording, I much preferred cooking direct to camera, although, I've watched the slots last night and tonight and I'm kind of coming across like a duracell bunny! Extremely excitable but I blame the cold! One of the biggest problems of the day was keeping the frying pan hot, because of the bitter cold weather, every time I would add something to the pan, it would cool down, but Leonie did come to the rescue by erecting a portable metal guard which she would stick around the hob and we would stop filming in order for it to heat up.

    I was actually flying to Sweden the following day to go skiing, so luckily had packed thermal underwear (I know, sexy right?) which after about five minutes of arriving I ran across to the nearest toilet to to change into them! So if you are wondering just how many layers I am wearing, I think the total came to seven, but I was still cold! We finished up after a long day with high spirits and lots of laughter! The dishes I cooked which will be coming up on the show this week are mackerel with chorizo potato salad, healthy Singapore noodles, healthy paella, aromatic duck salad, and one more which I has completely slipped my mind, so it will just have to remain a suprise for us all for now! :)

    :: Simple Mackerel Fillets with Chilli, Garlic and Lemon

    I'm pretty much settled back into the land of the living after the last few busy weeks and loving being back in my own kitchen. I'm especially loving the amazing weather Ireland has been having all week, summer is most definitely on the way and I am already thinking of more summer orientated dishes, with really fresh flavours! This is is the recipe for this weeks column in the Cork News, with a really simple recipe to make the best of one of my favourite fish, mackerel!

    Simple Mackerel Fillets with Chilli, Garlic and Lemon
    I grew up on mackerel! It was and still is one of the easiest fish to catch just off Howth head. I have some of the most amazing childhood memories of sunny mackerel filled summers with my grandad Do on his boat, where my cousins and I would be busy racing to pull in rods with heavy lines, fish on each hook, while my grandad would gut them and fillet them like the pro he was, belly laughing at the fact that we were all to squeemish to take them off the lines ourselves. For me, mackerel dishes always have to be simple with really fresh flavours, and I love this quick and simple lunch which has a great kick of heat thanks to the chilli. People get a bit worried when it comes to cooking fish, but go to the fishmongers and ask them to do all the hard work and you will be left really lovely fillets of fish which are no more complicated to cook than pan frying a chicken breast!

    Serves 4
    4-6 mackerel fillets
    2 red chillies, finely chopped with the seeds removed
    4 cloves of garlic, finely chopped
    Juice of 2 lemons
    A good drizzle of olive oil
    A good pinch of sea salt and cracked black pepper

    Place the mackerel fillets on a large plate and drizzle with olive oil and a good squeeze of lemon juice. Don't use all the lemon juice here, as it's nice to give the fish an extra squeeze of lemon while it cooks and then at the end to serve.
    Sprinkle over the chilli and garlic and gently rub into the fish on both sides, turning to coat in the lemon and olive oil.
    Season the fillets with sea salt and black pepper and cook on a hot, non stick griddle pan, over a high heat, for 2-3 minutes either side, depending on their size or until they are cooked through. Halfway through the cooking time, give them another splash of lemon juice.
    Serve the mackerel fillets with a spicy tomato salsa or a fresh side salad for a really light and healthy lunch!

    With 10,000 athletes expected to take part and raise €3 million for over 150 charities this year, the Cork city marathon is one of the biggest sporting events in the country. I have been asked to put together some really quick, tasty and nutritious pasta dishes to help out those folks already in training! Dishes like my Speedy Spaghetti Amatriciana and Rocket Fuelled Pasta will be sure to get athletes of all levels fuelled up and ready to rock on the big day!

    Hopefully my pasta recipes will appeal to both foodies and fitness enthusiasts and you can check them all out on www.readysteadycork.com alongside several fitness schedules and training guides designed to help a wide range of people - from experienced athletes to first-time marathoners. If you are planning on running a marathon these Power Pasta recipes are packed with foods and ingredients rich in protein and ‘good fats’ such as avocados, salmon, chicken and olive oil, providing vital nutrients and ensuring that there is plenty of variety in runners’ diets!

    Simple Spicy Tuna and Garlic Penne
    Tuna is a fantastic healthy store cupboard ingredient which is perfect for quick dishes just like this. You can use tinned tuna, but I really love the tuna you can buy in jars stored in olive oil.

    Serves 4
    250g of wholemeal penne
    2 tablespoons of olive oil
    2 cloves of garlic, finely minced
    1 teaspoon of dried chilli flakes
    A good handful of parsley, roughly chopped
    230g jar of tuna fillets in olive oil
    A good pinch of sea salt and ground black pepper

    Cook the pasta according to the instructions on the packet
    In a large frying pan heat the oil over a medium heat and add the garlic and chilli flakes. Fry gently until golden.
    Add the cooked pasta and the parsley to the pan and toss until the pasta is nicely coated.
    Break the tuna into rough chunks, add to the pasta and stir through.
    Season with a little sea salt and black pepper and serve straight away!

    :: Fergus Henderson Nose to Tail Demonstration At Donnybrook Fair!

    A few weeks ago, I received a lovely email from Monique McQuaid who runs The Cookery School at Donnybrook Fair, inviting me to a cookery demonstration with English chef, Fergus Henderson. To be perfectly honest I had never heard of Fergus before, but after a quick search on Wikipedia, I discovered he is the man behind the highly respected St. John's restaurant in London, which is famous for it's use of off cuts and using the whole body of an animal. Fergus was coming to Dublin to demonstrate cooking a pig from nose to tail, which was enough to grab my attention and I confirmed my attendance!

    We arrived slightly late and had to clamber over people to find seats at the back of the room, which wasn't all bad, with the tiered seating, we could still see the whole thing. The cookery school is located above the shop, and is a fantastic set up with plasma screens showing everything going on in the beautiful, modern kitchen which is fully equipped with everything you could imagine! Monique, a graduate of the famous Ballymaloe Cookery school, was dressed in chefs whites and although Fergus was doing all the talking, it was quite clear she was the one keeping things ticking over, pulling things out of ovens and prepping things as she went!

    To say Fergus is a slightly off-beat individual is an understatement, but I suppose I should have expected it, from a creative genius who is famous for cooking a pig from nose to tail. Throughout the course of his charming 2 hour long demonstration, amongst the amazing dishes he produced, he left us with with some fantastic uncommonly eccentric quotes, which had us chuckling in our seats, such as:
    1. "I spent my wedding night talking to my trotter."
    2. "Tripe is sexy, tripe is the way forward."
    3. "There is a certain Jedi knight quality to cooking."

    Fergus worked his way through the different cuts of pig, cooking up goodies like deep fried crispy pig tails which he suggested were perfect for a child's dinner, braised pig head, crispy pig's ear, and thinly sliced pig heart served in a delicious salad with pickled walnuts.     Fergus Henderson's Pot-Roast Half Pig's Head
    I say only half a head, as it is a perfect romantic supper for two. Imagine gazing into the eyes of your loved one over a golden pig's cheek, ear and snout.

    Serves 2
    A dollop of duck fat
    8 Shallots, peeled and left whole
    8 cloves of garlic, peeled and left whole
    1/2 pigs head (your butcher should have no problems supplying this) - remove any hairs with a razor
    A glass of brandy
    1 bundle of joy- thyme, parsley and a little rosemary
    1/2 bottle of white wine
    Chicken stock
    A healthy spoonful of Dijon mustard
    1 bunch of watercress, trimmed, or other greens- a case of Liberty Hall
    Sea salt and black pepper

    Dollop the duck fat into an oven tray wide and deep enough to accommodate your half pig's head and put it on the heat. Add the shallots and garlic and leave them to do a little sweating to improve the flavour of the dish. Shuffle the tin occasionally to prevent any burning, but you do want some colour.
    When happy with these, cover the ear of your demi-head with foil so that it doesn't frazzle, then rest the head in the tin. To welcome it to its new environment, pour the glass of brandy over it, nustle in your bundle of joy, add the wine and then the chicken stock in a not dissimilar fashion to an alligator in a swamp!
    Season with salt and pepper, cover the tin with greaseproof paper, offering some protection but not denying the need for the rigours of the hours to come in the oven- which is where you should now put your tin, in a medium oven for 3 hours, until the head is totally giving. Check it after 2-2 1/2 hours; you could remove the greaseproof paper at this point and get a little colour on your cheek.
    When ready, remove the head to a warm place. Whisk the Dijon mustard into the pan liquor, in which you should then wilt the bunch of watercress.
    Finally, on the head presentation platter, make a pillow of shallots, garlic and wilted watercress, where you then rest your head.
    There you have it- dinner for two; open something red and delicious: Moon, June, Spoon.

    Since the launch of the book I have been asked to do quite a few kids school demonstrations, and although I was a little apprehensive at first, I have pretty much grown to love them. The amazing thing that I forget about everytime I do a demo, is just how excited they get about food, and not only that, but how much they actually take in, when you speak about food. Today a little guy, around 7 years old, bravely stuck up his hand during the demo, in front of all of his mates and asked me, what was the best healthy substitute for mayonnaise. I was totally taken aback because it just shows that these kids are really thinking about the food that is being cooked! Having grown up learning how to cook from a very early age, I guess I always took that sort of knowledge as granted and to a certain extent it was just a part of normal life for me. After reading recent reports that 1in 5 of Ireland's children are obese, it's quite disturbing to think that these kids with unhealthy diets are growing up without that sort of knowledge. Knowledge which could potentially change their lives and have a dramatic impact on their health both now and in the long run.

    From what I can see on the TV and in the press, the problem with kids eating unhealthy diets doesn't lie with the schools, they can only do so much, the problem and the solution lies with the food routines set out by the parents at home. Which is why an emphasis has to be put on teaching those parents who can't cook, the basic meals and cooking habits which will set them up to run a healthy, happy household. I am of course coming to you from the viewpoint of someone who doesn't have kids and I don't mean to get all preachy on you, I know there are time constraints and all sorts of other factors to consider but when you see kids who have such an active interest in food you seriously have to question where the problem actually lies. What do you think?

    Food politics aside, I started a brand new weekly food column with Cork based newspaper, The Cork News, a few weeks back and it has been getting a really great response so far! Here is the recipe from today's column!

    Garlic and Rosemary Chicken with Roast Cherry Tomato Salad
    Although I do try to buy as much in season vegetables as possible I just can't resist using cherry tomatoes in this tasty little dish.
    The good thing about roasting the them is that it brings out the best from even the most tasteless tomatoes. By feeding them with a little sea salt, black pepper, olive oil and balsamic vinegar you are guaranteed little morsels packed with punchy flavour.
    It's dishes like this which are really simple and full of flavour that make mealtimes far more enjoyable and take the hassle out of cooking for groups. Feel free to adapt the recipe as you wish, try using different herbs, different salad leaves, just use what you have.

    Serves 4
    4 chicken breasts
    6 cloves of garlic
    2-3 sprigs of rosemary
    4 tablespoons of olive oil
    A good pinch of ground black pepper
    A good pinch of sea salt

    For the salad:
    4 tablespoons of olive oil
    2 tablespoons of balsamic vinegar
    A good pinch of ground black pepper
    A good pinch of sea salt
    1 large punnet of cherry tomatoes, sliced in half
    120g of rocket leaves
    1 small red onion, finaly sliced
    Shavings of parmesan cheese to serve

    In a bowl whisk together the olive oil and balsamic vinegar for the salad.
    Add the tomatoes to a large roasting tray cut side up, pour half the dressing over and toss to combine. Season with sea salt and black pepper.
    Place in an oven at 200oC/Gas Mark 6 for about 35 minutes or until the tomatoes have reduced in size.
    While the tomatoes are roasting in the oven, in a pestle and mortar or with the back of a knife, crush the garlic cloves with a little sea salt, until you have a fine paste.
    Remove the leaves from the sprigs of rosemary, and add them with the mushed garlic, 4 tablespoons of olive oil, and chicken breasts to a bowl and allow to marinade while you prepare the rest of the salad ingredients.
    On a large hot griddle pan, fry the chicken breasts for 3-4 minutes either side, depending on the size, but just make sure they are cooked through.
    In a large bowl, toss together the rocket, roasted cherry tomatoes, red onion and remaining dressing.
    Serve alongside the chicken with some shavings of parmesan cheese.

    One of the things I mastered last year, was preparing healthy dishes which are easy to have with you on the go.
    We (Industry) were on the road everyday during the summer when we released our first two singles so I made sure we all ate well in between our fairly tight schedule.
    Healthy salads were normally on the cards and went down the best, but if we were stuck for time quick and tasty wraps sorted us out!
    As I mentioned we were on tour with JLS all week, and the wraps below kept us full on the road up to belfast! We have been debuting our new tracks which you can hear over here, and here, so I hope you don't mind that I have stuck up a few photo's from the gig on Saturday night. We were very excited to perform in the O2 in Dublin, but I want to brace yourselves for the photos below, because a momentous occassion took place where I got my first pair of knickers thrown at me! Knickers on a food blog, who'd have thought! :)

    Quick Fresh Veggie Wrap With Crispy Prosciutto
    Wraps are extremely handy for a quick and tasty lunch! The best thing is that you can really go wild when it comes to the ingredients. There are so many variations on this recipe which I make regularely, like avocado and bacon, chicken and chickpea, or even tuna and rocket!
    Find your favourite combo and experiment. If you can't get your hands on proscioutto just pick up some streaky bacon instead.

    Serves 2
    6 slices of prosciutto ham
    2 large wholemeal tortilla wraps
    2 tablespoons of mayonaisse
    2 large handfuls of baby spinach leaves
    1 carrot, grated
    1/4 of cucumber, sliced thinly
    5-6 spring onions, sliced thinly
    A good pinch of ground black pepper

    In a large hot frying pan fry off the slices of prosciutto until crisp and golden. Remove and set aside on plate with a piece of kitchen paper.
    Spread 1 tablespoon of mayo on one of the tortilla wraps.
    Arrange the slices of cucumber, carrot, and spring onions down the centre of the wrap. Add the spinach leaves and then place 3 slices of the crispy prosciutto on top.
    Roll up the wrap and enjoy! Repeat with the second the second wrap.

    As a nice way to finish off the Leila Lindholm week here on the blog, Lorraine from New Holland publishing organised a phone interview with the lady herself! I was very excited on Thursday morning to be able to call the lovely Leila, to have a quick chat about baking, the muffin mafia and of course her next book! Enjoy!

    So you grew up in a family with a mix of cultures, tell me a little about the kind of food you had growing up, did you find you learned a lot about Morroccan cooking when you were growing up?
    I grew up with my mother and I only met my father when I was 24 so I didn't really grow up in a Morroccan culture at all, but my dad is from Morrocco.

    From most of Swedes I talk to, they don't exactly rave about Swedish cuisine, but what you consider the most typical Swedish dish?
    It's pretty much like Swedish meatballs and we have a special kind of sausage called Falun sauasage that we eat and I think quite a lot of international food aswell as I remember we went to restauarants at least once a week to have dinner when I grew up.

    I read you studied cooking, was that in Sweden?
    I studied a restaurant course in Stockholm and I started when I was 16 and finished when I was 19. When you finish the course you work in restaurants straight away.

    I was very excited to read in your book about the muffin mafia, a baking group you started with your grandmother when you were younger, can you tell me a little about the members?
    It was great, it was actually something me and my grandma's neighbour made up, because I used to run over to her house and she taught me how to bake and we baked like cakes and cupcakes and muffins. Then she decided that we could become pen pals and send recipes to each other and it was me and Aunt Elsa, then her friends up in the north of Sweden, they were a bunch of old ladies in their 60's and we would send recipes to each other. But I was the boss, the mafia boss!

    What were some of the first dishes you learned to cook?
    I think probably something simple like sausage and macoroni, or actually it was like grilled sandwiches! I used to with my best friend go to her place after to school and make all kinds of grilled sandwhiches with pineapple, really tacky sandwiches, with ketchup and pineapple and stuff on them and a lot of cheese!

    You have an extremely successful career in Sweden, what would you consider your big break?
    Well actually I had two kind of big breaks, the first when I was 24, I was chosen Female Swedish Chef Of The Year and that was a big break because I started getting into the media and got attention from the media. I started doing interviews in the press and that was back in 1999. Then the second big break came in 2004 when I was chosen TV chef of the year and then also it was a milestone in a sense as it was my big break in the tv business, and I started getting more possibilities with my cooking shows. I started on one of the biggest morning shows here in Sweden and when I won the award I got asked to do my own cooking series and then after this it's been quite a successful story!

    Well I can definitely see that! So who do you find you get the biggest reaction from your books, what kind of people?
    It's definitely women, but also mothers and kids, they love the baking show. I have heard from so many parents that their kids are watching the baking show on DVD's, they don't want to watch Disney movies, they just want to watch my baking show which is a little funny!

    What are some of your favourite dishes to cook apart from baking?
    I love to do barbeques, so that's what I am really looking forward to this summer, we have a lot of snow right now, but I can't wait to start doing barbeques, that's what I really love! Doing meat like sirloin steak, lamb legs, whole salmon, I can't wait!

    In every picture I have seen of you, you always look incredibly happy, are there any dishes that really frustrate you to make?
    I like to cook everything but sometimes there are dishes which are challenging when, of course, even for me, sometimes things don't work or like the Bearnaise sauce doesn't turn out, thats annoying. Also it's quite common, I'm sure you are familiar with this, when you have plan in your mind and it just doesn't work out when you cook it!

    From what I have read you have a big interest in styling as well as cooking, how did that get started?
    Well I think for me I have always been interested in aesthetic stuff, interior designs, and beautiful things so I collect beautiful things and it came from there. I love to create beautiful things and it's a huge passion I have a craving, I have to do it!

    When I was in Sweden I picked up your fantastic magazine Leila's Country Living but I heard it has stopped, will you be working on new issues of it in the future?
    Maybe in the future but right now I decided not to because I have just had a baby, and I decided to try two issues first in 2009, to make sure it went well because I have no experience in the magazine world. Then I realised that it is so hard to juggle the tv shows, and the book and the magazine.

    I was in a book shop in Dublin yesterday and spotted your book "A Piece of Cake", I didn't realise it had been released here aswell as the UK, are you hoping to come over here and break this market?
    That would be fantastic to work more abroad, but this is my first cookbook to be released outside Sweden, it has been released in The Netherlands, USA, Finland, Denmark, Germany, Switzerland, Austria, and in Italy so it's quite exciting to see where it's going to take my work. It's been nine months since I had my baby so I am starting to get back into work mode and we are starting to record season 3 of my baking show in about two weeks. I was also asked by the Discovery channel to do a couple of shows but that was when I just had by baby and it was a food travel show and it wasn't possible to travel.

    I'm guessing since the success of your books and tv shows in Sweden, and even with a new baby life has become a lot busier, how has your cooking habits changed?
    They haven't really, I kind of cook the same stuff I cook in my shows!

    Have you had any major on-air or off-air disasters when cooking on tv?
    No but sometimes in the studio its very hot so in like the spring time sometimes when you work with cake and chocolate and ice cream they melt, so that can be a bit of a disaster!

    I am a huge fan of cookbooks, have you got a big collection of books yourself, is there any you just couldn't live without?
    No I'm greedy I have to have them all! I have about over 100 books, but my favourites are from Martha Stewart and of course Jamie Oliver, his books are very fresh and beautiful!

    You worked with Jamie's photographer, David Loftus on one of your books, what was he like to work with?
    He was fun, he is a fantastic photographer, and it was great, we had done a couple of jobs for Delicious magazine in the UK, and some Swedish magazines also.

    Do you have some favourite cookbooks from Swedish food writers?
    There is a food writer called Anna Bergenstrom, she makes beautiful food, she is like the Swedish Julia Child, a legend!

    What do you think the success of a good cook book relies on?
    Good recipes, and recipies that work, and also that they are easy and they work for normal people. Of course the photography and styling is very important but also when you work with the text to make all the corrections in a book is so important so they are well worked through and very exact, so you are guaranteed the recipe is good.

    What are your plans for you next book, will you stick with baking or will you concentrate on any other specific aspects of food?
    It's actually going to be a follow up to "A Piece of Cake" and I made it with the intention of making two books and I wanted to do one book with sweet stuff and another with more savoury stuff, and it's called "One More Slice" and I bake pizza, pasta, and a lot of sour dough bread recipes, and also there is sweets too. There is a chapter called Cheesecake and another called brownies and blondies, and Ice cream too! So it's all the good stuff that didn't make it in the first book! I had so much material that I wanted to do two books!

    After all this unhealthy food, do you ever really feel like a good healthy salad?
    Absolutely I have to eat quite healthy to make sure I don't kill myself and keep in shape! But sometimes it's nice, there is always room for birthday cakes, and there is always celebrations where you are supposed to bake, it's just tradition. Also bread is a matter of when you eat it, if you have it at breakfast it is not as dangerous as eating it in the evening time!

    What do you think of food blogging, would you ever consider doing it yourself?
    Yes, it's most definitely in my future, but in my case I have been so busy with other stuff. I had a blog for 2 years and even though I wasn't active like the way you are, I wrote something at least once a week. But it is quite demanding if you want to write a good blog with a lot of content so it's hard work and for me write now it's difficult to find the time. But the food blogs are great and it's really fun to read them. So for me it's just a matter of time right now!

    Ok one last question, and I'm sure you have been asked this question a million times, but what would be your death row meal?
    It's a little bit of a depressing question and I would say sweets, but I am very into shellfish and seafood and oysters and a glass Chablis wine!

    Just when I thought there was a bit of spring in the air, I find myself out de-icing my car windscreen again! I am so ready for the spring to start, I am already dreaming of all the vegetables I'm planning to grow. In anticipation of what I like to think of as the lighter eating months of the year I have been cooking up some really tasty salads. I am particularly proud of this one, as it fits in nicely with my Chinese New Year recipes this week and is really fresh and healthy, so enjoy!

    Spicy Sichuan Chicken Salad
    A lot of Chinese dishes can be heavy going but this spicy Sichuan chicken salad, is light, bright and crisp. To get the best aromatic flavour out of the Sichuan peppercorns, toast them in a hot oven for a few minutes, allow them to cool and grind in a pestle and mortar.

    Serves 2
    2 chicken breasts
    1 tablespoon of soy sauce
    1 small thumb sized piece of ginger, grated
    1 clove of garlic, minced
    1 tablespoon of sunflower oil
    4-5 spring onions, sliced finely
    1 stick of celery, sliced finely
    5 shitake mushrooms, stalks removed and sliced finely
    ½ cucumber, sliced finely
    1 large carrot, sliced finely
    1 teaspoon of soy sauce
    ½ teaspoon of sesame oil
    2 teaspoons of lime juice
    1 teaspoon of honey
    ½ teaspoon of ground roasted Sichuan peppercorns
    ½ teaspoon of sea salt
    ½ teaspoon of dried chilli flakes

    Toss the chicken in a bowl with the soy sauce, ginger and garlic.
    Heat the oil over a medium high heat in a large frying pan and add both chicken breasts. Cook for 3-4 minutes either side or until cooked through.
    Remove the chicken from the pan, slice thinly and set aside.
    Place the chicken slices in a large mixing bowl and toss together with the rest of the ingredients, until everything is evenly coated.
    Serve the salad in delicious high piles and sprinkle with a little extra Sichuan pepper and sea salt.

    Chinese New Year falls on Valentines day this year, so it’s the perfect excuse to whip up some tasty Chinese dishes for your loved one to celebrate and I’m not talking about calling the local takeaway! But Chinese cuisine has so much more to offer than what’s on the local takeaway menu, it's packed with delicious sauces, aromatic spices, and unusual textures. If you haven’t tried cooking any Chinese dishes, I have put together some fairly easy ones which I'll be posting all week to celebrate Chinese New Year! They don’t take too much time and leave you with some incredibly tasty results.

    Healthy Singapore Noodles
    Singapore noodles are a standard Chinese restaurant dish, but making them at home is so easy and it also means you can monitor what’s going in to them, adding whatever healthy vegetables you feel like. The addition of curry powder to this dish not only brings a new flavour to it, but it coats the noodles and gives a great texture to every bite.

    Serves 2

    3 cloves of garlic, minced
    A thumb sized piece of ginger, grated
    1 tablespoon of oyster sauce
    2 tablespoons of soy sauce
    2 chicken breasts, sliced into thin strips
    100g of rice vermicelli noodles
    2 tablespoons of sunflower oil
    2 celery sticks, finely sliced
    1 carrot, finely sliced
    4 spring onions
    1 tablespoon of Asian curry powder
    1 teaspoon of sesame oil
    A good handful of bean sprouts

    Marinate the chicken with the garlic, ginger, 1 tablespoon of soy sauce and oyster sauce. Cover and place in the fridge for at least 30 minutes.
    Soak the noodles in a bowl of boiling water for 6 minutes or until soft. Drain and set aside.
    Heat a wok over a high heat and add the oil to coat. Add the chicken and stir fry for 3-4 minutes.
    Add the celery, carrot and spring onion, and stir fry for 2 minutes. Add the curry powder and toss through for another 2 minutes.
    Add the noodles and bean sprouts and a drop of sesame oil to taste. Toss everything together using kitchen tongs until it’s combined.
    Serve straight away.

    Well with the new year well in swing, and the days becoming brighter, I am already starting to get excited about the whole new season of ingredients to play with in the kitchen. I love really light and bright salads and getting back into the garden means being flooded with lots of fresh and tasty veg to make my way through!

    There are so many options when it comes to salads, and you can make them as healthy or different as you want. For me it just depends what sort of mood I'm in, but when I'm in a really healthy buzz, I absolutely love using as many fantastic healthy ingredients I can get my hands on.

    I don't know if you have come across a brilliant little food company called Good4U foods in the supermarket, but they produce a load of really healthy ingredients that are so easy to incorporate into salads. I originally thought the company was UK based because of their web address, but last year I got an email from the lovely Laura Butler who started the company with her mum Bernie in Limerick. I was thrilled to hear they were Irish based which gives me even more reason to rave about them. Their full range of products include, alfalfa shoots, brocco shoots, sunflower shoots, and a whole host of seeds which are all perfect for sprinkling over salads! Stay tuned to the blog this week as I have a fab competition coming up from the Good4U folks!

    Rocket Power Chicken Superfood Salad
    As the winter months are thankfully coming to end, I am already starting to look towards more fresh and healthy dishes. Thankfully the days are becoming longer and brighter, now don't get me wrong, I'm all about comfort food, but as we start to look towards the spring nothing beats a really fresh and zingy salad. This Rocket Power Chicken Superfood Salad ticks all the boxes for me, it's perfect for a healthy lunch box, just save the dressing until the last minute. I absolutely love Brocco shoots and Lentil and Bean Shoots from Irish owned health food company Good4U, and they can be found in most supermarkets, perfect for boosting healthy salads! The Good4U range has a whole host of healthy ingredients which include, alfalfa shoots,

    Serves 2
    100g bulgar wheat
    170ml boiling water
    A drizzle of olive oil
    2 chicken breasts
    A little black pepper
    25g brocco shoots
    60g lentil and bean shoots
    150g soy beans
    30g spinach leaves
    30g rocket leaves

    For the dressing:
    2 tablespoons of lemon juice
    1 tablespoon of natural yoghurt
    1 tablespoon of extra virgin olive oil
    1/2 teaspoon of English dried mustard
    A good pinch of sea salt and black pepper

    Place the bulgar wheat in a bowl with the boiling water and cover with cling film. The bulgar wheat will cook in the water while you can get on with the rest of the salad.
    Season the chicken breasts with a little black pepper, brush a griddle pan with a little olive oil and cook over a medium high heat for 4-5 minutes either side or until the chicken is cooked through. Remove the chicken and slice thinly.
    While the chicken is cooking, cook the soy beans according to the packet, drain and rinse in cold water, set aside.
    Whisk all the ingredients for the dressing together in a small bowl.
    In a large bowl toss the spinach, rocket, brocco shoots, lentil and bean shoots and soy beans with the dressing.
    Assemble the salad with a layer of bulgar wheat on each plate, top with the salad leaves and shoots and finally place the chicken slices on top and serve!
