Life is constantly full of surprises, there are some things I plan for and then there are some things that sneak up and just smack you around the chops! I was lucky enough to be shortlisted for the Irish Book Awards last month for my book Good Mood Food, but to be perfectly honest never really expected to win, it was an extremely tight category with some amazing competition. Not being a regular at black tie events I borrowed a tuxedo from my pal Simon, which just about fit, bar some tightening with a belt and dragged myself into the mansion house in Dublin for the awards. It wasn't until the first award winner Donal Og Cusack stepped up to deliver his speech, that the panic set in that on the off chance of winning, I had absolutely NOTHING prepared! Not the way I usually roll! So Best Irish Published category came up and guess what I WON! Honest complete utter shock took over and I really can't remember what I mumbled on stage but I was just so thrilled. It's a fantastic tip of the hat towards young and upcoming writers and huge win for myself, Mercier Press and of course everyone who was involved in producing the book. While celebrations ran into the earlier hours, I managed a couple of hours sleep before getting up to prep my demonstration at the Food&Wine Show in the RDS. It was a fairly packed weekend with the Taste Of Christmas also taking place at the new convention centre in Dublin. For my Food&Wine demo I ran through a collection of traditional Swedish Christmas dishes, after working at a Julbord (the traditional Swedish Christmas buffet) in Gothenberg, I had a great selection of interesting dishes to show off. Along with the Julgrot and Gravadlax I demoed the big hit of the day was the Jansson's Temptation a delicious creamy potato dish which is served alongside the Christmas Ham. It makes an interesting addition to our Irish Christmas dinner and I definitely suggest you give it a go! :) I am getting around to a full thank you video for the book award but I'll keep you posted on that!
Janssons Temptation Not unlike a French Potato Dauphinoise this Swedish take features anchovies and is a regular at the Swedish Christmas table. If you don't fancy the anchovies you could of course add some finely chopped garlic instead.
Serves 8 14-16 Swedish anchovy fillets and the brine they're stored in 2 large onions, sliced in half moons 5 medium potatoes, peeled and chopped into matchsticks 200ml of cream 2 tablespoons of butter A small handful of fine breadcrumbs Sea salt and ground black pepper
Preheat the oven to 225oC. Put half the potatoes into a large rectangular pyrex dish. Evenly distribute the anchovy fillets and onions over the top of the potatoes and top with the remaining potatoes. Pour half the cream and anchovy brine over the top and then add the butter in knobs over the top. Season with sea salt and ground black pepper. Place in the oven until the potatoes are golden and after 20 minutes remove from the oven and top with the breadcrumbs and remaining cream and brine. Place back in the oven and cook for a further 25-30 minutes or until the top is golden brown.
I'm writing this on a dark train in the middle of a snow bound Sweden, this week we are visiting Sofie's folks in Gothenburg, so I have unwillingly been catapulted into the Christmas season whether I like it or not. As you all know of course snow equals Christmas and during the long dark days in Sweden they really go all out for the festive season. We are hoping to get in all the sights and sounds of a Swedish Christmas to bring home some Scandinavian inspiration to our home just in time for the seasonal period. While all that is going on let's not forget that on these cold dark days, serious fuel is needed to boost the immune system and keep you up and running! My mushy Roast Garlic and Cherry Tomato Pasta is one of those dishes I came up with hungry after work last winter. It has all those great punchy flavors of roast vegetables combined to make the most luscious thick juicy tomato sauce for the hot pasta you tumble in on top. Don't be afraid of using a whole bulb of garlic, the roasting process will take away the strong flavors you get from raw garlic and instead you will be left with a sweet intense mush which can be pushed out its skin using the back of a fork. Possibly one of THE BEST recipes from Good Mood Food, you will make this one again and again!
Mushy Roast Garlic and Cherry Tomato Pasta Serving this little supper hot to the table with a good handful of freshly grated Parmesan cheese is an absolute must! It brings the whole dish together and pumps up all those amazing roasted flavors.
Serves 4 people 250g/9oz wholewheat penne 1 large bulb of garlic 1 punnet of cherry tomatoes 1 large red onion 1 tablespoon of balsamic vinegar 3 tablespoons of olive oil A good pinch of sea salt and ground black pepper A large handful of grated parmesan cheese An extra glug of olive oil
Preheat the oven to 200°C/400°F/Gas Mark 6. Slice the top off the bulb of garlic so that almost all the cloves are exposed. Place the garlic in a large roasting tray. Prepare the cherry tomatoes by slicing them in half. Place the tomatoes in the roasting tray. Prepare the red onion by peeling and slicing into rough quarters, place alongside the tomatoes and set aside. In a separate bowl, mix together the balsamic vinegar and olive oil and using a pastry brush, brush the mix over the tomatoes, the red onion and garlic bulb. Sprinkle the tomatoes, garlic and onion with a good pinch of sea salt and black pepper. Roast in the oven for 30–35 minutes or until the tomatoes have reduced to half their size. While the garlic, tomatoes and onion are roasting, bring a medium-sized pot of water to the boil and cook the pasta according to the instructions on the packet. Drain the pasta in a colander and set aside. When the tomatoes, garlic and onion are cooked, remove from the oven and, using a fork, carefully push out the garlic cloves from their skins and mash all the ingredients together until you have a thick mushy sauce. Tumble the cooked pasta into the roasting tray and add the parmesan cheese and an extra glug of olive oil. Toss everything together until the pasta is evenly coated. Serve in a large bowl and enjoy!

They are running free cookery demonstrations all weekend to celebrate the launch of Dublin’s finest produce market. Clodagh McKenna will begin the weekends demonstrations at 11 a.m. on saturday morning cooking dishes from her new cookery school at the Village at Lyons.
At 1 p.m I'm up and will be putting my twist on some delicious local produce and signing a few copies of my book, "Good Mood Food", if you already have a copy, bring it down and I'll sign it for ya! At 2.30pm, co-founder of Ballymaloe Cookery School and one of Ireland’s finest chefs, Rory O’Connell will be giving a masterclass in simple, elegant, and seasonal dishes. On Sunday there will be a lesson in all things spicy with Green Saffron’s Arun Kapul from 1 p.m. This will be followed by Pam Holligan from Ballyderrin House who will be taking you into summer with some seasonal dishes from her award winning guest house and cookery school.
There is rumoured to be a number of special guests throughout the weekend and best of all, it’s free! So come early, learn some new dishes and experience all that Dublin’s best produce market has to offer.

I cooked a few of my favourite recipes from the book and the blog, Chicken Thigh Supper, Med Veg with Bulgur Wheat, and one of the tastiest pastas, Sunblushed Tomato, Goats Cheese and Basil, Penne!
The pace on the Afternoon Show is quite relaxed and because you shop for your own ingredients it means you see the demo from start to finish and are a lot more hands on. I suppose, looking back, I was totally overwhelmed by the Market Kitchen experience, having never cooked on TV before and being surrounded by big names in the UK food world, whereas I have been interviewed on The Afternoon Show before when I was in Eurosong, so I knew the set up and I visited last week to watch another chef do their demonstration, which put me at ease!
After some late night cooking last night, I packed up my little car with all the ingredients and headed over to RTE, making a quick pit stop in Superquinn to grab some last minute items, a bottle of red wine, bulgur wheat and 2 aubergines! When I arrived it was just a case of setting up all the ingredients, choosing all the props, plates and bowls I needed from the prop room and just thinking through everything I needed.
We did a quick rehearsal and I met the lovely ladies, Maura and Sheana, who present the show and they were so nice, Sheana spent the afternoon telling me she loved the book and was definitely going to try some of the recipes! Before I knew it we were live and I was grinning like a fool down the lens of the camera and it turned out my old pal, Dustin The Turkey was on the show as well and he was a charming as ever, I gave him a few good turkey recipes before he left!
The funniest part of the whole experience was at the end of the show. I had been pre warned that the crew love getting stuck in to the food that's cooked on the show, but nothing prepared me for the eight people crowded around all the food like vultures digging in with forks! They all loved the food so happy days- empty plates are always the best form of a compliment for a cook!
2009 has been a fairly spectacular year indeed, between the band, the book, and lots and lots of cooking I have never been so busy in my life, but it has been totally worth it! Here's my run down of 2009 highlights!

- Going to Stockholm to record Industry's first single, "My Baby's Waiting". - Received first draft of Good Mood Food, the book. - Pancake season! - Went to Stockholm to support my Swedish superstar buddy sing at the Swedish Eurovision selection. - A name was finally chosen for Industry, thankfully 4DB was thrown out the window. - Going to Stockholm again to record very first music video, for "In Your Arms". - Doing first photoshoot as a band- very glamorous. - Was busy working on what I thought were the final drafts of the book. - Planned my very first attempt at a vegetable garden. - Planted Dill, Fennel, Pak Choi, Broad Beans, Cauliflower, Broccoli, Red Cabbage, Cabbage, Cos Lettuce, Rosemary. - Submitted last photos for the book. - Made first public outing as Industry on the red carpet at the Meteor Irish Music Awards. - Went for a walk on the cliffs every morning this month. - Blog got 10,000 unique visitors in one day, was very excited. - Got my very first blog/book press. - Back to Stockholm to record more tracks with Industry. - Flew to Spain to record music video for Industry's "My Baby's Waiting". - Took a little break in Gothenberg with Sofie. - Submitted what I thought was the last draft of the book. - Fell in love with dried Mango... mmmm... mango. - Got the BBQ out early for Mays mini heat wave. - Back to Stockholm again to record more tracks with Industry. - Shot the final cover for the book with the help of Erica and Sofie. - Performed with Industry at our press launch at The Sugar Club in Dublin. - Industry's single got it's very first airplay on 2fm. - Got a blackberry phone. - Sang Kate Bush wuthering heights in falsetto on radio, not pleasant but very funny. - Discovered Flahavans porridge pots which kept me alive and well on the road. - Got to finally visit Cork's English Market. - Went to Ireland's Eye with Morgan and Lee for my birthday. - Found a brill table to shoot food on. - My annoying but hilarious fight with the birds and the strawberries. - Lee buying male Ugg boots. - Got introduced to Dave Peelo, the toughest fitness trainer you ever did see. - Industry's first single "My Baby's Waiting" went straight in at number one in the Irish charts. - Performed at the Ms. Universe competition. - Went to LA with James, Morgan and Sofie. - Got upgraded on the flight over but had to slum it on the way back. - Saw the massive amount of tributes to Michael Jackson at his house and his Hollywood star. - Went surfing with my Uncle Niall on Santa Monica beach. - Did a photo shoot for VIP magazine, blue steel was out in force. - Went to outdoor yoga in Stephens Green in Dublin. - Supported the Pussycat Dolls at the Killarney Summerfest. - Sent off the final final final edits of the book. - Visited the republics very first Ikea store. - Recorded music video for Industry's second single "Burn" at the amazing Grouse Lodge studios. - Went on a romantic little bank holiday break in a cottage near Carlingford. - Co-hosted the South East Radio breakfast show with the brill Tony Scott and Industry. - Became a regular contributor with Irish Tatler. - Industry's second single "Burn" went to number one. - Supported Tynchi Stryder in Tralee, as you do. - Had a brill getaway anniversary weekend in Castle Leslie, massages all round. - Started tweeting 140 character recipes on my twitter. - Appeared on RTE's Ice with Industry. - Performed at the Barretstown Charity Bandana launch. - Went blackberry picking with Maisie the cupcake queen. - Picked up my copy of Good Mood Food! - Recorded 3 new tracks with Industry at the amazing Grouse Lodge recording studios. - Picked up my brand new camera, the Canon 5d Mark ii. - Saw the book in shops for the first time, rearranged the shelves. - Appeared on the front page of the Irish Examiner. - Did lots and lots of radio interviews about the book. - Went mushroom hunting with Aoife. - Went back to school to do a cupcake demonstration at my old school. - Interview on Tubridy with Ryan Tubridy about the book. - Got a text from Michele to tell me she nearly fell over when she saw a giant poster of me in the window of Dubray Books on Grafton Street in Dublin! - Did the official launch of the book in Dubray Books on Grafton street in Dublin. - Appeared on RTE's The Cafe with Industry. - Went to Gothenburg and visited a Swedish bakery. - Interview with Ian Dempsey on Today FM. I got a message the other day from the lovely Darragh Doyle which linked me to two videos from the night of the book launch! One was an interview which Darragh did with me upstairs in Dubray Books on Grafton St just before the guests arrived, and the other was a video of all the speeches! I am really thrilled because I had forgot to get someone to take a video and I assumed that the whole night would just be a great memory, but now I have the real thing! This is my recipe contribution to December's edition of Irish Tatler, and it also just so happens to be one of my favourite recipes of all time forever and ever the end! It is also one of my favourite recipes from my cookbook which may I remind you would make a lovely christmas present for a loved one! Ok shameless plugs aside, this is such a wonderful dish and it's super easy to prepare, stick the duck in the oven slice the vegetables, make the dressing and you're done! Couldn't be easier!
Open Aromatic Duck Salad
This is basically an adaptation of the classic aromatic duck and pancake dish which is available at most Chinese restaurants. It’s one of my favourite dishes and is so simple to produce. The tender crispy duck goes well with the fresh raw vegetables and tangy Asian dressing.
Serves 2 1 crispy half duck portion (available pre-cooked at most supermarkets) 2 large carrots, thinly sliced ½ cucumber, thinly sliced ½ Chinese cabbage, finely shredded Bunch of spring onions, thinly sliced
For the dressing: Juice of ½ lime 2 garlic cloves, finely chopped 1 thumb-sized piece of ginger, peeled and finely chopped 2 tablespoons of rice wine vinegar 2 tablespoons of oyster sauce 1 teaspoon of sesame oil
Before you start, put the duck in a roasting tin (you can stick the breast on a wire wrack, this way the fat will drip) and place in the oven for approximately 20 minutes at 200°C/400°F/Gas Mark 6 or until heated through. In a large mixing bowl mix the ingredients for the dressing. Add the carrot, cucumber, cabbage and spring onions, and toss to combine. Take the duck out of the oven, slice thinly and add to the salad. Serve straightaway.
You all like reading the blog right? Maybe some of you might have bought my lovely book which came out this time last year… Well I have some pretty great news and a favor to ask! Earlier this month I got a phone call to tell me that Good Mood Food had been shortlisted in the Irish Book Awards in the educational category! All very exciting stuff as you can imagine, but all very grown up don't you think? My first experience at award ceremonies was earlier this year at the Irish Blog Awards, but if you'd been at that I'm sure you'll agree it's a little more shall we say relaxed. But the Irish Book Awards? You have to wear a Tux! I don't even own a Tux! Needless to say it's all very exciting really, and the week before last I was invited along for a cheesy photo shoot with some of the other nominated authors at The Royal College Of Surgeons, I even got to meet the lovely Celia Ahern (a fellow failed Eurosong contestant, who's gone on to write a book, but we didn't get into that!).

This is another one of my favourite dishes from the book. Food that is full of flavour for only a tiny amount of effort is ideal for entertaining. Most of the time all you need is the basic ingredients in order to create wonders! Although chicken on the bone is a little bit more effort on the plate, I truly believe there is far more flavour going on than plain old chicken breasts. Not only that but it is cheaper to buy thighs, wings and legs it's far tastier! More often than not you can get them at special offer also. To be honest if you buy whole chickens and get your head around learning to cut them up into thighs, drumsticks, wings and breast pieces you will save a fortune. Stick the meat you don't need in freezer bags and pop them in the freezer and dinner will never be too far away! Chicken thighs are a handy ingredient and this recipe really makes the best of them. It's a hearty dish packed with mouth watering flavours!
Chicken Thigh Supper
This is a super dish for a big group of people, served with a tasty salad; it’s perfect for weekday entertaining. If you can’t get a hold of chicken thighs, you can use any other cuts as long as they’re on the bone. This gives the meat a really great flavour. Serves 4 6–8 chicken thighs 200g pancetta, diced, or bacon bits 1 x 400g tin chopped tomatoes 75ml/3fl oz red wine 2 garlic cloves, sliced thinly 1 red onion, chopped in half moons 2 sprigs of rosemary 2 sprigs of thyme 2 teaspoons of English mustard powder 2 tablespoons of olive oil
In a large deep frying pan, heat 1 tablespoon of olive oil, and brown the chicken and pancetta, until you get a nice colour on the thighs. Set aside on plate covered with kitchen paper. In the same pan, add the rest of the oil and fry the garlic, onion, rosemary and thyme for 2 minutes. Sprinkle over the mustard powder and stir through. Add the tinned tomatoes and red wine, and bring to the boil. Add the chicken and pancetta pieces back to the pan, turning the chicken pieces to coat. Cover the pan and cook for 20 minutes over a low heat or until the chicken is cooked through. You may need to extend the cooking time depending on the size of the chicken thighs. I don’t add salt to this recipe as the pancetta can be quite salty, but make sure to taste it and add seasoning if needed. Serve with a tasty salad and some hearty wholemeal bread.
Today is the day I am going to share one of my ultimate favourite recipes from the book! I started writing my first food column in the Irish Independent Weekend magazine last weekend and got the opportunity to share some of my personal favs from the book, including Kerstin's bursting berries with white chocolate, Chicken Thigh Supper, Lime and Mint Mohito Chicken and Hasselback potatoes. However as I know there are a lot of readers beyond Ireland that might be interested in these recipes I thought it would be worth posting here too! Crispy Hasselback Potatoes
I came across the recipe for Hasselback potatoes when I was younger and they are so visually appealing that I had to make them. The traditional recipe, originally from Stockholm, calls for breadcrumbs and cheese, but I have tried to make it as simple as possible for this recipe. The potatoes go nicely alongside most dishes. If your potato slices don’t separate while cooking, increase your heat and you should get better results.
Serves 4 Approximately 20 baby potatoes 2 tablespoons of melted butter A generous pinch of sea salt
These potatoes are a little bit daunting at first, but once you get the knack of it you’ll have no trouble! The idea is to cut slices about 3mm in thickness right across the potato, but to keep them attached at the bottom. If that all sounds a bit too much, there is a quick trick you can use: place the potatoes on a wooden spoon and slice down: the dip in the spoon will prevent you from slicing all the way through. When you’re finished, place all the potatoes sliced side up in a roasting tray and brush each one with the melted butter and give a good sprinkling of coarse sea salt. Roast at 200°C/400°F/Gas Mark 6 for approximately 45 minutes or until the slices of the potatoes fan out and turn golden brown. Serve straightaway and dig in!

Apologies for the delay in this post, I am still try to get over all the excitement. The launch of the cook book took place on Wednesday evening and it really got a great turnout, I was so thrilled! So now it's official the book is finally launched! I have to say a huge thank you to everyone who came along on the night, it was so lovely to meet regular readers of the blog, and of course all my fellow Twits who attended too!
With the help my lovely aunt, we provided the nibbles, inspired by recipes in the book. We had Lemon and Poppyseed Cupcakes, Swedish Cinnamon Buns, and Roast Vegetables and Feta Crostini!
Niamh Hatton from Mercier Press spoke briefly about the book and the other books they had coming up in the next few months, she was followed by Eoin Purcell who commissioned the book way back at the start of 2008 and spoke about working on the book! Normally I prefer to speak off the cuff at these sort of events but there was so many people I had to thank, that I knew I had to write it all down! Myself and the blog have come a long way since my very first post here way back in 2007 and I would just like to say a massive thank you to everyone who has emailed, commented and called about the recipes on the blog and in the book! I really hope you will join me next Wednesday the 21st of October to support the launch of the book in Dubray Books on Grafton St., Dublin! See you there for a great night!
Just a quick note to say that the book has hit Irish bookshop shelves in the last few days so if you want to get a copy, it should be there!
There is a great feature in the Irish Examiner on the book today and it even gets a mention on the front page on the weekend supplement and the main paper. I'll post it soon!
