    Thankfully work is that little bit less busy this week, which has given us time not only to play in the snow, but also to spend some more time in our new little house. It's not there just yet, but it's really starting to take shape and after numerous trips to IKEA we finally have enough furniture to fill the place! I wasn't feeling very at home in the house, mainly because the last three weeks had been so jam packed, dinner was eaten out and breakfast was bought on the way. I know I know, not exactly the perfect routine, but there had been no time to set up the kitchen just the way I like it. So the last few days we've been making big breakfasts and enjoying really tasty dinners using up the ridiculous amount of food I've left over from all the cooking we've been doing. Ireland, for my foreign visitors, at the moment is experiencing probably the most snow that I can even remember, so I think it's definitely time for some comfort food. This recipe was from a piece I wrote on comfort food for the Irish Independent. I suggest using ready to go gnocchi, but if you are lucky enough to be snowed in, it's all the more comforting to make them yourself!

    Mozzarella, Tomato and Gnocchi Bake
    Gnocchi in Italian translates as ‘lumps’, and it goes way beyond pasta as my ultimate bowl of indulgence. You can make the gnocchi yourself, but you should be able to pick up packs of the ready-made stuff quite easily. This dish combines the classic Italian flavours of tomato, mozzarella and basil, all baked together for a fantastic comforting dinner.

    Serves 4
    500g fresh gnocchi
    1 tbsp olive oil
    2 cloves garlic, finely chopped
    1 onion, finely chopped
    2x400g tin chopped tomatoes
    1 tsp dried chilli flakes
    2x125g mozzarella balls, sliced
    1 tsp sugar
    Handful of basil leaves
    Sea salt and black pepper, to season

    Cook the gnocchi according to the instructions on the packet, then drain and set aside. Heat the olive oil over a high heat and sauté the garlic and onion until soft. Add in the chopped tomatoes and chilli flakes and bring the sauce to the boil.
    Lower the heat and cook at a steady simmer for 15 minutes until it has reduced. Add in the sugar and season with sea salt and ground black pepper. Preheat the oven to 200°C/Gas Mark 6. Tumble the gnocchi into the pan and stir through with the tomato sauce until each piece is nicely coated.
    Pour into a highsided baking dish (9in x 9in) and top with the mozzarella slices and torn basil leaves. Place in the oven for 25-30 minutes or until the top is nicely golden brown and bubbling. Serve straight away in deep bowls with a little grated Parmesan.

    I have to admit I am a little disappointed in the food culture of Sweden, but then again coming from Ireland where we are awash with small artisan producers I guess I have been a little bit spoiled for choice. When I first arrived here a few years ago, I was so impressed to see kids at school eating proper lunches and cafe's serving full on salads on their menus. However I have scraped a little beyond the surface and despite having very balanced diets and having a good sense of "eating well" it seems to me, many Swedes food options begin and end at the supermarket. There is that ominous feeling of large food machine in operation behind the scenes spewing out what the consumer demands. While in Ireland I certainly don't shop at farmers markets everyday but I do like the option to. If you are from Sweden and can point me in the direction of some good honest food not produced for the supermarket I'd love to hear about it- prove me wrong!

    New Season Spiced Lamb with Simple Griddled Asparagus
    Lamb is in season right now and if you are looking for something a little different try this spicy rub. Today's recipe is a bit of change up for the traditional lamb chop. While I love the simple and delicious flavours of lamb sometimes it's nice to mix things up and try something a little different, which is why I love this spicy rub. The spice rub also works well on other meats too so give it a go!

    Serves 4
    4 Irish spring lamb chops
    ½ tablespoon of cumin seeds
    ½ tablespoon of coriander seeds
    1 teaspoon of chilli flakes
    ½ tablespoon of turmeric
    1 teaspoon of paprika
    A generous pinch of sea salt and ground black pepper

    For the asparagus
    1 large bunch of Asparagus (3-4 spears per person)
    1-2 tablespoons of olive oil
    A generous pinch of sea salt and ground black pepper

    In a pestle and mortar grind together the cumin, coriander, chilli, turmeric, paprika until you have a really pungent orange coloured powder.
    Place the lamb chops on a plate and sprinkle on the spice mixture, turn to coat.
    Cook the spiced chops under a hot grill for about 2-3 minutes either side until cooked through.
    While the lamb is cooking, snap off the woody end of the asparagus and toss the spears in a bowl with sea salt, black pepper and olive oil. Fry on a hot griddle pan until tender for about 3-4 minutes.
    Serve the lamb and asparagus with some salad leaves and enjoy.

    Simple Spicy Tuna and Garlic Penne
    Tuna is a fantastic healthy store cupboard ingredient which is perfect for quick dishes just like this. You can use tinned tuna, but I really love the tuna you can buy in jars stored in olive oil.

    Serves 4
    250g of wholemeal penne
    2 tablespoons of olive oil
    2 cloves of garlic, finely minced
    1 teaspoon of dried chilli flakes
    A good handful of parsley, roughly chopped
    230g jar of tuna fillets in olive oil
    A good pinch of sea salt and ground black pepper

    Cook the pasta according to the instructions on the packet
    In a large frying pan heat the oil over a medium heat and add the garlic and chilli flakes. Fry gently until golden.
    Add the cooked pasta and the parsley to the pan and toss until the pasta is nicely coated.
    Break the tuna into rough chunks, add to the pasta and stir through.
    Season with a little sea salt and black pepper and serve straight away!

    Just when I thought there was a bit of spring in the air, I find myself out de-icing my car windscreen again! I am so ready for the spring to start, I am already dreaming of all the vegetables I'm planning to grow. In anticipation of what I like to think of as the lighter eating months of the year I have been cooking up some really tasty salads. I am particularly proud of this one, as it fits in nicely with my Chinese New Year recipes this week and is really fresh and healthy, so enjoy!

    Spicy Sichuan Chicken Salad
    A lot of Chinese dishes can be heavy going but this spicy Sichuan chicken salad, is light, bright and crisp. To get the best aromatic flavour out of the Sichuan peppercorns, toast them in a hot oven for a few minutes, allow them to cool and grind in a pestle and mortar.

    Serves 2
    2 chicken breasts
    1 tablespoon of soy sauce
    1 small thumb sized piece of ginger, grated
    1 clove of garlic, minced
    1 tablespoon of sunflower oil
    4-5 spring onions, sliced finely
    1 stick of celery, sliced finely
    5 shitake mushrooms, stalks removed and sliced finely
    ½ cucumber, sliced finely
    1 large carrot, sliced finely
    1 teaspoon of soy sauce
    ½ teaspoon of sesame oil
    2 teaspoons of lime juice
    1 teaspoon of honey
    ½ teaspoon of ground roasted Sichuan peppercorns
    ½ teaspoon of sea salt
    ½ teaspoon of dried chilli flakes

    Toss the chicken in a bowl with the soy sauce, ginger and garlic.
    Heat the oil over a medium high heat in a large frying pan and add both chicken breasts. Cook for 3-4 minutes either side or until cooked through.
    Remove the chicken from the pan, slice thinly and set aside.
    Place the chicken slices in a large mixing bowl and toss together with the rest of the ingredients, until everything is evenly coated.
    Serve the salad in delicious high piles and sprinkle with a little extra Sichuan pepper and sea salt.
