    :: Sadhbh's Cookclub- Delicious Beef Pho!

    This was the piece I wrote for my feature in the Irish Independent Weekend Magazine, about the fantastic cookclub I attended recently:

    Bright and bubbly Sadhbh McCarthy hosted one of her regular dinner parties as part of her cook club with a celebration of some of her favourite recipes for pals, Brid, Fiona, Karen, Peter and Colm. Sadhbh who works as a European policy advisor, chose her menu which was a hearty mix of cultures, based around a refreshing and aromatic starter of Vietnamese beef and noodle soup, Beef Pho. A dish which she fell in love with on a trip travelling from Ho Chi Minh City to Shanghai and was determined to recreate it when she came home. The soup caused a friendly heated debate as some of the more apprehensive guests were unsure about the addition of red chilli. However the debate quickly dissipated when Sadhbh helped by Peter, presented a glowing platter of hot sizzling Thai Fish Cakes straight from the pan. Originally a Rick Stein recipe, Sadhbh adapted it using her own blend of curry paste and spoke encouragingly about being flexible when cooking Asian dishes as long as you keep the base flavours.

    All the ingredients used for the recipes were sourced from the indoor Honest2Goodness farmers market in Glasnevin, run by Sadhbh’s friend Brid Carter. The pair met through a combined love of good food and Brid provided the secret ingredient for a wonderfully tender pork belly and added an extra zing to the dish by using her own blend of 5 spice powder sourced from the market.

    Dessert was provided by Sadhbh’s son Jamie, who is training to become a chef in DIT, he made a mouth-watering cheesecake topped with summer berries adapted from a Bill Granger recipe which was accompanied by a smooth berry coulis which cut through the creaminess to add another dimension to the dish. It was a unanimous decision around the table that the addition of Moonshine Organic Cream Cheese from artisan producers Gerry and Mary Kelly in Mullingar set the standard when it came to adding an extra creaminess to the dessert.

    Wines were carefully selected by trained sommelier and wine obsessive Colm Carter who works alongside Brid at the market every Saturday. He chose Domaine de l'Amandine Cotes du Rhone 2007 for the starter, a Vina Marro, Crianza 2006 Rioja Doca for the rich pork belly and a fruity Oddero Moscato d'Asti 2007 to go with the cheesecake.

    I hadn't intended on interrupting by staying the whole evening, but Sadhbh and her friends fully welcomed me with a glass of wine and in a true case of Irish hospitality I found myself polishing off dessert with a full belly! Sadhbh summed up the fantastic evening by sharing her ethos on her cook club which was to “Cook with love and a desire to share and enjoy the experience”.

    Pho Bo – Vietnamese Beef Noodle Soup
    (from Annabel Jackson’s Street Café Vietnam)

    To serve 4
    450g fresh flat rice noodles or rice sticks
    225g beansprouts (blanched briefly to soften slightly)
    8 shallots, thinly sliced
    4 tablespoons finely chopped fresh coriander
    225g beef fillet, thinly sliced

    For the broth
    1.7 litres beef stock or canned beef consommé
    115g piece fresh ginger, peeled and smashed
    2 sticks cinnamon bark
    ½ teaspoon coriander seeds
    3 pieces star anise
    1 teaspoon each caster sugar, sea salt and freshly ground black pepper
    4 teaspoons nuoc mam (Vietnamese equivalent of nam pla (fish sauce)

    To serve:
    Hoi sin sauce and chilli sauce
    2 limes, cut in half
    2 fresh red chillies, thinly sliced
    Bunch of fresh ngo gai (if available) – this is a Vietnamese herb
    Bunch of fresh Thai Basil

    To make the broth: bring the stock to boiling point. Add the ginger, cinnamon sticks, coriander seeds and star anise. Simmer for about 15 minutes. Add the sugar, salt, pepper and fish sauce. Strain the broth and return to the pan. Keep hot over a low heat.
    Bring a pan of water to the boil, and warn through fresh noodles or cook rice sticks until al dente. Drain and divide among individual bowls. Add a handful of blanched beansprouts and some shallots and coriander to each bowl and top with the beef (still raw). Ladle the hot broth over the food in the bowl (this will cook the beef slightly).
    At the table, each diner can add hoi sin, chilli sauce, lime juice, fresh chilli ngo gai and basil leaves to taste.

    :: CHILLI CHICKEN BROCCOLLI ASAPARAGUS NOODLES

    This isn't exactly the most amazingly intricate Chinese dish I have made but I chose to write about it because, if you have all the ingredients it is a very simple, tasty, balanced and healthy meal.

    The first time I was introduced to real Chinese cuisine (I'm not talking about the deep fried slop from the local take-away which uncontrollably I am partial to now and again) was during a visit to my Aunt's house where a Chinese friend was giving a cooking demonstration to a group of her friends. I was encouraged to try beef, ginger and scallion, a simple dish which seemed to capture the simplicity of this extensive cuisine.

    A short while after this encounter I was taken on a trip to the Asian market in Dublin city, it was then and there I fell in love! The bottles full of strange and foreign ingredients, the cling wrapped chicken paws poking out the sides of freezers, the huge bags of various assortments of rice and noodles were all enough to create great excitement at such a young age.

    Now having tried hundreds of recipe's and still exploring new ones, Chinese cuisine has become a staple part of my diet.

    Chili Chicken Broccoli Asparagus Noodles

    1. 2 Large Chicken Breasts
    2. 1 Red Chili chopped finely
    3. 1 inch of fresh ginger chopped finely
    4. 2 Garlic Cloves chopped finely
    5. 2 Tablespoons of Oyster Sauce
    6. 1 tablespoon fish sauce
    7. 1 tablespoon rice wine vinegar
    8. 1 teaspoon of sesame oil
    9. 8 Asparagus Sprigs cut in to bite size pieces
    10. 1 Broccoli head cut in to bite size pieces
    11. 1 Red Onion cut in half moon pieces
    12. A handful of Ho Fan Noodles
    First of all you will find with most Chinese recipe's the hard work is all in the preparation before the cooking starts. Boil some water for the noodles and begin by chopping all your ingredients.

    Chop the chicken breasts into thin strips and place in a bowl with the chili, oyster sauce, fish sauce, rice wine vinegar, sesame oil and half the garlic and ginger. Combine the ingredients and place in the fridge to marinate.

    Drizzle the prepared broccoli, asparagus and onion with a little oyster sauce and sesame oil. Fry the garlic and ginger in some oil until brown then add the onions and follow with the rest of the veg. When this is cooked through remove from the pan and place on a plate.

    Now add the noodles to the boiling water and stir, they should only take about five minutes, keep checking them and make sure not to overcook. Now fry off the chicken, when it's cooked add the veg and by this time your noodles should be cooked. Drain them and mix with the chicken and veg. Serve immediately!

    I got this recipe from my auntie Annie who originally used Delia Smith’s. It’s a really tasty little relish which goes great with burgers, fish or in a tasty sandwich. It also makes a super Christmas present- make a big batch and decant to interesting jars, label them and hey presto a cheap a cheerful Christmas gift any foodie would love!

    Chilli Jam
    The original quantities are doubled here, as I prefer to make a larger batch. In this case you really need to sterilise the jars you use in order for the jam to last longer.
    To sterilise the jars and lids wash with boiling water, rinse and dry in an oven for 5-10 minutes on a baking tray at 150˚C/300˚F/Gas 2. Be careful the glass gets quite hot!
    This recipe makes approximately 1 litre of jam; I distributed this amongst a variety of jars. You can check what fits by filling them before hand with 1 litre of water from a measuring jug.

    3 medium red chillies, deseeded and roughly chopped.
    1kg of tomatoes (I used approximately 16 tomatoes).
    4 cloves of garlic, crushed.
    2 thumb sized pieces of ginger, peeled and roughly chopped.
    2 tablespoon of Thai fish sauce (Nam Pla).
    450g of Demerara sugar.
    1 tablespoon of balsamic vinegar.
    100ml of red wine vinegar.

    Place half the tomatoes into a food processor and blitz until finely chopped. Transfer to a medium pot. Place the rest of the tomatoes, red chillies, garlic, ginger and Thai fish sauce into the food processor and blitz until it becomes a smooth paste. Transfer to the pot and place over a medium heat. Stir through the sugar, balsamic vinegar and red wine vinegar. Bring to the boil stirring regularly, then reduce the heat and keep at a steady simmer for 35 minutes or until the jam has reduced by half its volume. Stir every 5 minutes. When the jam has cooked allow to cool and then transfer to sterilised jars. Cover and place in the fridge. Enjoy with sandwiches, alongside meat or fish dishes, or as a delicious dipping sauce.

    As I think I mentioned before I am a HUGE fan of Asian cuisine, so I thought I would write a post about the essential ingredients for your very own Asian pantry.

    I have been having a terrible time recently when it comes to cooking Asian inspired dishes because my girlfriend is extremely allergic to soya and nuts. Soya is a staple part of Asian cuisine and in many recipe's hard to avoid. However not one to be beaten I have been adapting some of my favourite dishes without the addition of soya, so I will include some of these here in the future with soya as an option.

    On to the reason were here, in the ever shrinking world getting your hands on international ingredients has become ever so easy! I would normally have said just pop down to your local Chinese supermarket as this is what I would do in Dublin, but I was living in the north of Ireland for a couple of months recently and asked where the nearest Chinese supermarket was and the answer to which was laughter. There is a great little shop in Dublin that I visit regularly to stock up and it's nuzzled in the back of a building of Georges St. So if you ever get a chance to visit, do!

    You can purchase lots of these ingredients in supermarket's now but I like the having the options of more than one brand to choose from.


    1. Soy Sauce- A fermented sauce made from soy bean, roasted grain, water, and salt. I was a bit of an addict before my recent situation arose, as it really adds a salty sweet taste to dishes.
    2. Chilli Flakes- Made from crushing dried chilli peppers, give a nice spice when added to dishes.
    3. Rice Wine Vinegar- A much milder vinegar than the western variety, can be used in most dishes and sauces.
    4. Fish Sauce- A sauce brownish in colour and salty in taste. Is often substituted for salt in dishes. It is more common in Thai cooking but I use it all the time.
    5. Sesame Oil- Used mainly as a flavour rather than a regular cooking oil as it burns very quickly- has a very distinct nutty flavour.
    6. Ginger- An aromatic root of the ginger plant, has a strong fresh flavour. Can be used in stir Fry's soups and marinades.
    7. Oyster Sauce- It's name alone tends to put people off, but this sauce doesn't have a strong fishy taste due to the fact the oysters are boiled. It's a very rich sauce with a strong savoury flavour.
    8. Lemon Grass- Another strong aromatic flavour here. This herb gives a distinct lemon smell and taste. It can be used in soups and chopped finely into stir fry's.
    9. Chinese 5 Spice powder- A seasoning which combines sweet sour bitter savoury and salty all in one. It consists of cinnamon, star anise, ginger, cassia, and cloves.
    10. Noodles- I always aim to keep a wide selection of noodles in my press, these include different varieties of Egg noodles, Rice noodles and Wheat Noodles. My best advice on this one is to experiment, it's the only way of finding your own taste.

    ::SPICY CHICKEN AND CUCUMBER SALAD

    This is still a fairly experimental dish, but the idea is similar to the duck salad I posted earlier this month, but without the noodles. It's really easy, quick and spicey! If you have a cold this will really clear those sinuses!

    Spicy Chicken and Cucumber Salad

    1. 2 Chicken Breasts finely sliced
    2. Enough flour to coat the chicken slices
    3. Salt and Pepper
    4. 1/2 Cucumber finely sliced length ways
    5. 2 Peppers finely sliced
    6. 1 Red Onion finely sliced
    7. 6 Radishes finely sliced
    8. The juice of 1 Lime
    9. 3 tablespoons of Rice Wine Vinegar
    10. 1 tablespoon of Fish Sauce
    11. 1 Teaspoon of sesame oil
    12. 2 Cloves of Garlic very finely chopped
    13. Half a red chili very finely chopped
    14. Thumb sized piece of ginger peeled and very finely chopped

    Wow fourteen that's a lot! STAY WITH ME! Mix the flour with salt and pepper and coat the thinly sliced chicken. Fry them in a very hot pan with vegetable oil until nice and brown, leave to the side.

    In a large bowl, combine the lime juice, rice wine vinegar, fish sauce, sesame oil, garlic, chili, and ginger. This should be to your taste so add something, subtract something be my guest! Add to the bowl, the cucumber, radish, red onion and red pepper. Mix the all the ingredients together in the spicy dressing.

    Serve the spicy cucumber salad with the chicken strips on top and enjoy!

    This is a great little lunch you can prepare the night before, it's simple fresh, tasty, and can be eaten hot or cold! I've started taking lunch in every day to work so it's become interesting experimenting with what works being bundled in a bowl and reheated!

    QUICK STIR FRY LUNCH (Serves two)

    1. 2 Cloves of Garlic finely chopped
    2. 1 Red Onion cut in half moons
    3. 1 Head of Broccoli
    4. 2 Red Peppers
    5. 2 tablespoons of rice wine vinegar
    6. 1 tablespoon fish sauce
    7. 1 teaspoon sesame oil

    Prepare the veg, finely chop the garlic, slice the red onion into half moons, remove all the florets of broccoli, and slice the peppers horizontally. In a hot wok put about a tablespoon of sunflower oil and fry the garlic for 1 min, add the onion and fry for a further 2 mins, then throw in the Broccoli and peppers and stir with the garlic and onion.

    Keep stirring and add the rice wine vinegar, fish sauce, and sesame oil. Serve hot or keep in the fridge for lunch tomorrow!

    This, I'll be honest with you, is a bit of an experimental recipe! I like fishcakes but it just feels a bit wasteful, to spend money on a nice bit fish, and mash it up, with potatoes. I know that it's a bit weird, but it got me thinking that even though its not exactly the height of culinary excellence, I could substitute the fresh fish with some cheap and cheerful canned fish like tuna.

    As a recipe this works fine, the cakes form well and cook evenly, the only thing is that if you use canned tuna like I did, you have the flavor of canned tuna, which can be a bit over powering in something like this. When I make it again, I'm going to use tuna packaged with oil in a jar which might be a little less in your face. But really the recipe works with any fish, so just substitute that part.

    Cheap and Cheerful Fishcakes

    1. 300g of baby potatoes
    2. 2 cans of tuna
    3. 1 egg lightly beaten
    4. Bunch of spring onions chopped
    5. Handful of Parsley roughly chopped
    6. A good pinch of salt and pepper
    Bring the potatoes to a boil in some water and cook for about 10 mins, or stick a fork in the them to see if there soft and tender. Drain the water and mash the potatoes.

    Drain the tuna or fish of choice and add to the the pot of potatoes along with the egg, spring onions, salt, pepper and parsley. Mix together and form into palm sized cakes and set aside.

    Heat a large frying pan, add a little bit of vegetable oil, and fry the cakes on both sides for about 5 minutes or until golden brown. Serve with a side salad and some sweet chili dipping sauce.

    It's a bit of a slow week this week- after our trip to Sweden, we're gently easing ourselves back into normality. The weather in Gothenberg was great when we arrived on Friday at 27oC and sunny, however the rest of the weekend was interrupted, regularly by big filthy rain clouds! But the weather didn't dampen spirits and a full schedule of activities were plowed through, rain or no rain!

    We ate out twice in two really spectacular restaurants, they were very pricey but offered really amazing food and stunning seaside views. Sjömagasinet specialises in Fish and is located in Gothenberg harbour. To start I had a really elegant, "Classic lobster soup with carpaccio of scallops, served with crème of green peas and deep fried belly of pork" and for mains, "Fricassee of halibut, North Atlantic cod and flounder served with roasted shallot sauce, pan fried scallop and prawns" however this came served in what seemed like a pretty pointless dish, with the fish dotted around the sides, and a soup bowl center which the shallot sauce was poured in.

    My favourite of the two was, Nya Langedrag Vardhus, which is part of the main Yacht Club in Goteberg. I had an amazing Tuna Carpaccio with Pea Shoot salad to start, and Lamb fillet with terrine of portabella mushroom and celeriac, browned red wine sauce and
    tomato roasted potato roll for the main course. So delicious! I seriously recommend both if your visiting Sweden!

    As a food blogger, it's quite often that you get sent offers and promotions by new companies or event organisers on a weekly basis, asking for promotion on the blog. If the product or event is something that catches my attention, I do generally give it a mention or ask for a sample so that I can use it in a recipe for the blog. This was the case when I received an email two weeks ago, from Nigel Cobbe, the owner of the brand new company, Simply Sourced which is a home delivery service throughout Dublin and Wicklow for top quality free range and totally traceable meat. It's a really great concept and having sampled the product it offers a really reliable alternative to butchers and supermarkets. I like the idea that they have a set price and you know the quality of produce to expect!

    Nigel told me that their pork is from rare breed of Saddlebacks which have fabulous depth of flavour whilst their beef is from a rare ancient pedigree called the Long Horn -Heston Blumenthal's source for his ultimate steak! Orders are individually butchered to customer's requirements with free delivery throughout Dublin & Wicklow with orders above 50 euro.

    Simply Sourced prices are close to and often less than supermarket / butcher prices yet bear no comparison in terms of quality and taste i.e. Denny Rashers are 21 euro/kg, ours are 19 euro/kg.
    Their handmade sausages are the same price as Tesco Finest and contain over 92% shoulder and belly meat, Tesco's are just over 70% meat content. They also have a gluten free range at no extra cost.
    All the meat is delivered chilled, fresh and vacuum packed for immediate enjoyment or for freezing for up to 6 months.

    I tried the fillet steak in the recipe below and I can honestly say it was one of the best cuts of meat I have ever tasted. The steaks are really velvety and full of flavour, you really don't have to work too hard to make cuts of meat like this tasty. I also sampled the breakfast gammon which was equally tasty and I will definitely be ordering that again! With plans to expand this home delivery service across the country, I expect this will not be the last you have heard from Simply Sourced!

    Oriental Steak Salad
    You can add as many other ingredients to the salad as you want, beansprouts, or snow peas all work great in this. I used fillet steak here, but as this can be quite expensive, other cuts will work just as nicely, try sirloin or a good quality shoulder steak. This recipe can also be made ahead of time, marinade the meat in the fridge, prepare the veg beforehand and only toss with the dressing when you are ready to eat.

    Serves 4
    4 x 120g fillet steak
    1 cucumber, thinly sliced
    2 carrots, thinly sliced
    6 spring onions, finely sliced on the diagonal
    1 red pepper, thinly sliced
    Small handful of chopped coriander to serve

    For the marinade and dressing:
    1 chilli, deseeded and minced
    1 thumb sized piece of ginger, finely minced
    2 cloves of garlic, finely minced
    Juice of 1 lime
    1 teaspoon of sesame oil
    1 teaspoon of thai fish sauce
    1 tablespoon of soy sauce
    3 tablespoons of sunflower oil

    Place the steaks on a plate.
    Mix all the ingredients for dressing/marinade together and pour 1/4 of the mixture over the steaks.
    Toss all the veg together in salad bowl and set aside.
    Heat a large griddle pan and fry the steaks for 3-5 minutes on either side depending on their size.
    Remove the steaks and allow to rest on a chopping board for a few minutes.
    Add the dressing to the salad and toss to combine.
    Slice the steak thinly, sprinkle with a little chopped coriander and serve with the zingy salad.

    As you might have guessed, if you are a regular reader of the blog, I have a major thing for zingy Asian food! It all started when I was a lot younger, when my grandmother bought me a simple Chinese cookbook. At that stage I had already worked my way through most of the cookbooks in our house but had never tried to cook any sort of Asian food. Ingredients like ginger, lemongrass, coconut milk, and the rather peculiar looking star anise were all foreign to me, as a curious youngster. I took it upon myself to become immersed in this little book, being brave and cooking the most strange sounding dishes first, in order to get a taste for the vast landscape of this cuisine. From fortune cookies to spring rolls, from Thai green curry to sushi, I really gave everything a go and even though they may not have all turned out quite to plan, the process in itself was totally enjoyable and left me with a fascination for Asian culture and recipes.

    I have still never been anywhere in Asia and it is my absolute dream to travel, eat and photograph my way across the continent, well maybe that's a little ambitious, maybe just the main places to start with. I don't know when it's going to happen, but it will, and when it does I want to be ready for it so, I'm putting together a hit list of places to visit, people to see, and food to eat.     Mini Aromatic Duck Salad
    This a slightly adapted version of one of my favourite recipes from my cookbook. It's fairly similar, the only difference really being that, I serve the salad in mouthful portions on baby gem lettuce leaves here. Apart from the duck don't be too concerned about the salad ingredients, anything goes here really, things like bean sprouts, shredded Chinese cabbage, finely sliced snow peas are all perfect also. You can get amazing aromatic duck breasts in the frozen section at good Chinese supermarkets, which only require roasting time in the oven for delicious results.

    Serves 4
    2 aromatic duck breasts, cooked and shredded
    2 carrots, thinly sliced
    6 spring onions, thinly sliced on the diagonal
    1 red pepper, thinly sliced
    Baby gem lettuce leaves, to serve

    Dressing:
    3 tablespoons of sunflower oil
    Juice of 1/2 lime
    1 teaspoon of fish sauce
    1 tablespoon soy sauce

    Add all the ingredients for the dressing to a bowl and whisk to combine.
    Add the duck, carrots, spring onions, and red pepper to the bowl and toss with the dressing to combine.
    Arrange baby gem lettuce leaves on a serving platter and add spoonfuls of the duck salad to them.
    Serve straight away, or refrigerate the duck salad and assemble when required.

    :: SIMPLE BASIC CHICKEN STOCK RECIPE

    The beauty of a good hearty chicken stock is, that not only is it packed with health benefits, it can be the base for hundreds of different, quick and simple recipe's. The recipe I'm posting is fairly basic, but really you can add whatever herbs or root veg you have in your kitchen, and experiment with the flavors. The cooking process breaks down the ingredients and the finished product contains minerals like calcium, magnesium and phosphorus, in a form which the body can easily absorb.

    Now I know that making stock is not the most exciting of recipe's to talk about, but once you do have the rich golden finished product, it can be transformed so easily. Boil a portion of the stock, add some minced garlic, ginger and chili, some fish sauce and rice wine vinegar and drop in some cooked noodles. Top with some spring onion sliced thinly and within minutes you have a healthy, hearty, Asian inspired soup.

    The easiest time to make this stock is probably right after you have devoured a roast chicken, as the bones are more than likely ready for use! Just throw the ingredients in the pot and let it boil away for a few hours- effort level zero! Alternatively you can throw the bones into a zip lock bag and store in the freezer until you find a perfect stock making day.

    Basic Chicken Stock

    1. Leftover bones and carcass of chicken
    2. 8 Litres of Water
    3. 12fl oz White Wine
    4. 1 white onion Chopped
    5. 1 large carrot Sliced
    6. 1 Large Leek Sliced
    7. 1 Stick of Celery chopped
    8. 3 Stalks of Parsley
    9. 8 Black peppercorns
    Place the chicken bones and carcass in a large pot with the water and bring to a steady boil.

    Then add the rest of the ingredients and allow to simmer consistently for 3 hours or until the flavour is right for you.

    Make sure to check on the pot ever now and then to skim any fat that rises to the surface- this while make sure you have a nice clear stock.

    The stock can be kept in the fridge for a few days or frozen in handy bags in the freezer. You can also store some of the liquid in ice cube trays, which comes in handy to add an extra bit of flavour to sauces, and gravy.

    Is it me or has it been a little quiet around here recently? I think I've only just gotten back into the swing of cooking again after my little break. Sofie and I finally made the journey up to IKEA in Belfast over the weekend to get all those essential apartment items after nearly a year. We have been threatening to make the trip, since it opened in December, but it just kept getting put off- but we did it in style and spent a whopping eight hours in the store as if to make up for it!

    I know that's a bit mad but we did like 4 sweeps of the place and missed out on very little. I love the kitchen stuff in IKEA, and my favourite thing we got on our shopping trip was this cool little kitchen trolley thing which doubles up as both a storage unit and a work top! I particularly like this because now I can perform a mini cookery show when we have guests over! :) (Pictures coming soon!)

    On to the food! I cooked this dish over the weekend as a bit of an experiment and thankfully no plates were left empty so I'm taking thath to be a good sign.

    Cajun Salmon and Asian Greens (Serves 2)
    For Salmon:
    2 Organic Salmon Fillets
    1 tsp. white pepper
    1 tsp. garlic powder
    1 tsp. onion powder
    1 tsp. cayenne pepper
    1 tsp. paprika
    1 tsp. black pepper

    For Asian Greens:
    Selection of veg diced (Broccoli, Carrot, Asparagus, Red Pepper)
    2 Tablespoons of Rice Wine Vinegar
    1 Tablespoon of Nam Pla (Fish Sauce)
    1 Teaspoon of Sesame Oil
    A pinch of salt

    In a large bowl combine the Rice Wine Vinegar, Nam Pla, Sesame Oil and salt, then add the diced veg and mix through. Cover and set aside in the fridge.

    Mix the spices for the salmon together. Place the salmon fillets skin side down on a grill plate and sprinkle with the seasoning. Place under a hot grill for approx 7-8 mins.

    While the Salmon is under the grill, in a hot frying pan stir fry the diced veg mix until soft.

    The Salmon should be cooked by this time, if your worried it isn't cooked through, poke a knife into the centre of the flesh and check if it is still pink- if its is you may want to give it another minute or so under the grill.

    When everything is cooked serve on a plate and enjoy!

    Most of life's great decisions come from having absolutely no prior knowledge as to how something is going to turn out. That was most certainly the case over the weekend. You might remember earlier this year I got roped into cooking for 800 hungry Parisians for an event on a small island in the west of the city with Le Fooding magazine sponsored by our very own Bord Bia. Well after the huge success at Chalet Des Illes, the delightful Noreen Lanigan, decided she wanted more abuse from me and decided, being a blogger I would be the right person to demonstrate at the third annual Salon Du Blog Culinaire, an event organized by a cookery school north of Paris in the little town of Soissons, in November. The event is quite unique and very timely with the amount of food blogs continually on the increase. It invites lots of France's finest food bloggers to demonstrate their favorite dishes and kitchen techniques in a fairly manic two day period watched on by fellow bloggers eager for culinary inspiration. During the summer I had the opportunity to meet a group of France's top food bloggers who were on a visit to Ireland to discover the fantastic conditions our lovely animals enjoy before they head off the little farm in the sky and onto our supermarket shelves. To put things in perspective here, unlike our own Irish food blogging community which, while thriving and very rapidly increasing in numbers, this group of French food bloggers were 10 of over a thousand. These guys were the cream of crop and are well and truly established with tens of thousands of visitors a day, numerous cookbooks and iPhone and iPad Apps. Not surprising really from a nation who takes so much pride and passion in their cooking that they would be willing to fall out with each other over a bad Boeuf Bourginon!
    After our visit to the farm, I demonstrated some of our traditional Irish dishes, including Irish stew, brown bread and roast lamb, and was gently reminded again that Noreen had plans for me in November…

    Clare Clinton who is interning at Bord Bia's Paris office got the ball rolling earlier this month with emails back and forth to decide the best recipes to show off our finest meat and fish products. Despite me dragging my feet, we eventually decided upon 6 dishes to cook and impress the French food bloggers, including mussels in Irish cider, crab claws with chilli, garlic and lemon, roast shoulder of lamb with rosemary and garlic, a good auld Irish stew and to mix things up a little an oriental steak salad and spicy Beef fahitas.

    Myself and Maeve Desmond, who I'm sure many of your may have met at Bloom or the Irish Food blogger event in May, flew to Paris on Friday evening just in time for a late dinner in a beautiful restaurant very close to La Bon Marché. The restaurant proudly serves Irish beef alongside some French classics and the quite adventurous dishes I chose including Carpaccio of veal tongue served with a salsa and for mains Pieds et Pacque d'agneau which on the English menu I was reading from was translated as feet and packets of lamb. I'm big believer in always trying something different in another country rather than something familiar but unfortunately sometimes it doesn't always work out the way I had planned. The veal tongue had a very interesting texture and flavor and was complimented quite nicely by the salsa it was served and was definitely worth the chance of trying, however the Lamb feet and packets, left a little to be desired… The packets turned out to be a strange little dumplings of finely minced pork wrapped in what looked very much like tripe and actually tasted quite nice, but the feet had about as much meat on them as my little finger. Maeve and Noreen played it safe and benefited from doing so with Maeve going for an amazing long wooden platter of beautifully sliced ham and of the Irish beef and Noreen choosing a lentil salad to start followed by the most amazing French black pudding which was really rich and velvety, a stark contrast to what we are used to with a fry! Dessert was a financier de poivre, an individual little flat cake with pear and île flottante a big dollop of fluffy egg white and sugar which was served floating in a dish of vanilla cream and topped with a caramel sauce. After all that we rolled our way back to our hotel ahead of the six o'clock start on Saturday morning.

    There is one thing I don't do and that is early mornings, sure I can be full of energy first thing but I fade fairly rapidly during the day! Noreen runs a tight ship let me tell you (This woman has a tractor license!), so at 7.06 with toothbrush still in mouth, I answered to phone to a bright and sparky Noreen who wanted to know were I was! Rushing out the door and out onto the streets of Paris, I stumbled on Noreen and Clare (and a sleepy Maeve!) negotiating the boot of the car with Irish posters, recipe booklets and of course the suitcases. We were all bundled into the car and then the real fun started- our departure from Paris was fairly comical not helped of course by the GPS which took us on the wrong road at least twice.

    When we finally arrived in Soissons and at the culinary arts school the 3rd Salon Du Blog was well underway. One of the French food bloggers who had been on the visit to Ireland, was the charming Chef Damien who makes a mean Boef A La Guiness and runs the school and a highly successful website, 750g, which attracts a ridiculous amount of visitors on a daily basis!
    There was definitely a huge sense of excitement as we were ushered through the halls of the school and passed the many rooms where different food bloggers would be spending their weekend. We arrived at the Bord Bia room which was positioned perfectly smack bang in the middle of all the rooms which guaranteed us constant traffic and visitors and were introduced to our helpers Suella and Virginie. It's always fairly nerve-wracking arriving at a new kitchen so there was some fierce scurrying around to get all the equipment and ingredients before we were due to kick off with our first demonstration at 11am!
    We got kick started with a great turnout and the rest of the day was so busy that it became pretty much a blur except for the fantastic Bloggers Picnic that had been organized for lunch, where all the bloggers had brought along a little dish to be a part of the most massive buffet of food I have ever seen!
    One thing that should be noted and that is instantly clear in terms of the difference between Irish food bloggers and French food bloggers, they have no problem telling you they would done something differently, where we might be a little bit more shy to go up and taste test if someone is giving a demo. So it was all fairly nerve wracking to make sure things were cooked just the right way! Either way I love their passion!

    Saturday finished off with a giant blogger banquet complete with hoards of Irish cheese, Irish salmon, Irish beef, Irish lamb and randomly enough a little bit of good old Irish dancing! We were sitting having a great time but the minute the music started Noreen told us she had to get up to take some photos and we thought no more of it, a few minutes later we looked down at the dance floor and there she was like Jeanne Butler on acid leading the Ceili putting the rest to shame- and THAT'S how you represent the country! I don't know whether it was the dancing or not but Noreen headed back to Paris on Sunday and we were joined by another lovely lady from Bord Bia, the lovely Bernadette, lovely! :)

    On the last demo of the day on Sunday I was accompanied by Chef Damien to demonstrate a very simple dish of crab claws with chilli, garlic and lemon. The whole thing was a crazy combination of both of us trying to translate each other language but somehow I think it worked, and I suppose it did help that we were being filmed for the French tv station!
    All in all it was an absolutely fantastic event and I think we represented Ireland quite well if I do say so myself. My only wish was that I had got to see a lot more of the other demonstrations, there was a massive variety of food being demoed but I did manage to catch one or two! An absolutely massive thank you to Chef Damien, my two lovely kitchen assistants, the lovely ladies of Bord Bia, and of course all the French bloggers who made me feel so very welcome!

    Hello Hello!

    We got back from Turkey last night and are already feeling the cold! I'm going to be posting a little bit about each place we sailed through over the next two weeks and I have over 2000 photo's to sift through and edit so I'll be sticking them up too.

    I also have some very exciting news about the book- tomorrow is the first official photoshoot complete with food stylist and photographer! We have spent most of the day preparing for tomorrow and all I can say is it's a stark contrast, going from tanning in 30 degree heat to prowling through boxes of peppers for the most photogenic, within hours of stepping off a plane! We have been cooking all day and the first shots will be taken tomorrow morning, so I'm hoping to feature a few behind the scenes pics later this week.

    For now here is my travel log day 1 to 3! The pictures are more foodie related as the days progress so stay tuned and Enjoy!

    Orhaniye
    The whole holiday was booked through Sunsail an English based yacht charter company, and unlike previous visits to Gocek, we decided to explore the new base of Orhaniye. After a long day which started in the early hours at Dublin airport, and a fairly erratic drive from Dalaman airport we finally arrived at our destination of Marti Marina, Orhaniye, in one piece. I always find it a bit disorientating arriving somewhere in the dark, but even the dim light could not disguise the fact that Marti Marina looked very much like a boat yard, and the website featured a hotel overlooking the marina. However on closer inspection the hotel was still in the process of being built and the building site gave the impression that the builders had given up and left a long time ago! But this was not our problem, in little under a few hours of well needed sleep, we would be on the water sailing, the overlooking building site, a distant memory.
    We picked up our yacht, a Cyclades 42, which would be home for the next two weeks and gave it a quick once over before hitting the pillow.
    The marina itself is fully functional with Shower and Laundry facilites, a small supermarket, a salt water swimming pool, and two restaurants overlooking the bay.
    After a briefing at the sunsail office, picking up provisions in the supermarket, and a quick application of much needed suncream we were out sailing.
    Two of the best things about a sailing holiday, is that you are outdoors practically all the time, surrounded by fresh air and with the water being so warm and clear, you find yourself in and out quite regularly to cool off from the sun’s heat. The second, you get too see so much, travelling to a brand new destination everyday!

    Dirsek
    Our first stop was Dirsek, a stunning little bay, surrounded by tall dry mountains, about an hour’s sail south from Orhaniye . There is a small restaurant in the bay which is run by the owners, who quite inconspicuously live in tents along the edge of the water, adding to the hands on feel of the place. Boats can anchor in the bay and tie a line ashore or the restauarant offers lazy lines along a jetty. We arrived at around lunchtime and got straight in for the first swim of the holiday, the water is so clear that you can see the bottom even at about 9 meters up, this makes great conditions for snorkelling, which quickly became my new favourite activity! We motored in to the restaurant with the small dighy which comes with the boat and arrived to a scene of what I would describe as controlled chaos. The regular chef had been rushed to the dentist with some major dental urgency and a happy go lucky waiter had been drafted in as the sorry individual who was set to take up the reigns. Guests are invited to go into the kitchen and choose from large table of meat and fish for their main course. On the opposite counter, large glass dishes full of cold starters are spread out in a large row for guests to choose from.

    Roast Aubergine in Tomato Sauce, Cooked Green Beans with Yoghurt, Olive Oil and Garlic, Boiled Potatoes with a simple scattering of Parsley, Fried Corgettes, A sort of Onion, red Pepper, and Chilli Salsa, Cooked Spinach and Yoghurt topped with a sprinkle of Paprika, Cheese wrapped in Filo Pastry, and Tzatzichi were among the many dishes which made up the Turkish Mezze, a term coined to describe this massive selection of dishes. The restaurant charges a set price for the Mezze and you can choose whatever dishes you want in a buffet style, it’s a brilliant way to get a chance to try all the different flavours.

    Now it’s not often that I feature sickly romantic moments between myself and Sofie, apart from the picture on the "About" page, but after dinner we lay up on deck and watched the stars. I know, I know, pass the bucket, but in our defence, with the only unnatural light coming from the restaurant in the distance, it was practically unmissable. I have never seen stars as amazing as on that night, and as we lay flat on our back it was as if we were wearing 3D goggles, with every last twinkling light jumping down at us. What a perfect way to end a great day.

    Monastery of Panormitis, Simi
    Our next stop was a long sail to the Greek island Of Simi, just on the border of Turkish waters. It was an extremely strange little port, whose mystery was heightened further, when we discovered the pilot book had absolutely no information about it. It seemed to be less of a town and more of a church with surrounding accommodation, we only came across one restaurant, there could have been more. The change from Turkish to Greek waters was quite significant in terms of cuisine and for dinner we ate a pretty standard fare of Calamari, Moussaka, Souvlaki, with large side dishes of Tzatzichi.
    The large abbey sits right on the water front and is lit up quite impressively at night, the whole bay has a white painted walkway which goes from the abbey right the way around and up the hill to a large old windmill which overlooks the bay.

    After a bit of googeling I discovered that the Monastry is Greek Orthadox and dates back to 450 AD. It is the largest on the island and is also considered one of the most important.

    Apart from a few small shops, there was a bakery which sold fresh bread in the morning and had extremely tasty coconut macaroons topped with cherries.
    We left the following morning for a long and bumpy sail to the small Turkish town of Datca...
